    Trying out new recipes, and cooking with the kids is just a way of life at our house. The kids love helping and really get into it, sometimes suggesting different spices or other ingredients.

    While some combinations (garlic powder and muffins??) are not winners, others, like adding a touch of cinnamon are. Getting them excited about cooking is a great way to talk about nutrition, math, and science. 

    This school year is unlike any other, but taking the time to make something together, really helps connect a family. And while the delicious muffins bake? Well, that's a great time to snuggle up and read together!

    And, if you're a peanut butter fan, you have to try this peanut butter and jelly smoothie, too!

    Peanut Butter Chocolate Chip Muffins ingredients

    Ingredients

    • all-purpose AND whole wheat flour
    • quick cooking oats
    • salt
    • baking powder
    • ground flax seed (optional)
    • wheat germ (optional)
    • ground cinnamon
    • ripe banana
    • light brown sugar
    • eggs
    • cows milk or almond milk
    • pure vanilla extract
    • mini chocolate chips

    This is meant to be a brief overview on how to make chocolate peanut butter banana muffins. For step-by-step instructions and a full printable recipe card with ingredients, please scroll down to the teal box below or Jump to Recipe

    Instructions

    Here's how to make peanut butter banana chocolate chip muffins:

    1. Preheat the oven to 375-degrees F.
    2. Grease a jumbo muffin cups using coconut oil (or use paper liners).
    3. In a large bowl, combine all the dry ingredients, except brown sugar, and whisk together. Set the dry ingredients aside.
    4. In the bowl of an electric mixer fitted with a paddle attachment, beat the mashed banana, butter, peanut butter, brown sugar, and eggs together until fluffy. 
    5. Add the milk and vanilla and mix to combine.
    6. Slowly add the dry mixture a little at a time into the wet ingredients until just blended. Do not over mix.
    7. Stir in the semi-sweet chocolate chips.
    8. Fill the prepared muffin tin two-thirds of the way full.
    9. Bake for 18-20 minutes – a toothpick inserted into the middle should come out slightly sticky.
    10. Let the pan set for 5 minutes before turning the muffins out onto a rack to cool.

    Tips for Making Muffins

    • Take care not to over-mix the batter to avoid dense and dry muffins.
    • I like to use a jumbo muffin tin, but you can also use a standard size. Either way, be sure to line your pan with muffin liners or grease them really well with butter or cooking spray!
    • Don't overbake your muffins - this seems obvious but no one likes dry crumbly muffins, right?

    Variations

    Here are some ideas to make this easy recipe your own:

    • Swap out the mashed banana for apple sauce.
    • Use a mixture of dark chocolate chunks and peanut butter chips.
    • For a little more texture in the muffins, use chunky peanut butter.
    • Pour this batter into a mini loaf pan or two instead of making muffins. You can also make mini muffins. Keep in mind the baking time will vary.
    • Almond flour or gluten free flour can be substituted 1:1 for the all-purpose and whole wheat flour.
    • Instead of peanut butter, use almond butter.
    • I love adding wheat germ and flax seeds to my healthy muffin recipes, but these ingredients are optional.

    These homemade muffins are packed with amazing peanut butter flavor, and some great healthy ingredients. I've adapted the recipe to really make these Peanut Butter Banana Chocolate Chip Muffins healthier and more flavorful.

    There's no oil, and only just a touch of butter. You could swap the butter out for coconut oil or applesauce if you prefer.

    I love doing a mixture of whole grain and all-purpose flour in my baked goods. Wheat germ and ground flax seed add a nuttiness, along with the creamy peanut butter, of course. They also add a little boost of Omega-3 to the chocolate chip peanut butter muffins, which is really important for kids.

        Hi Dana, if you love a little crunch in your muffins, you could use chunky peanut butter or chop up a 1/2 cup of peanuts or walnuts and add them to this batter also!
