    Chocolate coconut energy balls are delicious and easy to make. They are the perfect afternoon pick-me-up!

    If you're like me, sometime around 2:30 PM you start to feel the slump and sometimes coffee just isn't enough. If that's you too, then you need to try my chocolate coconut energy balls.

    This snack is full of delicious ingredients (hello Nutella!) and has powerhouse energy that will push you through to dinnertime.

    You can find all of the ingredients either in your pantry or at the local supermarket and they come together in 15 minutes. Nothing fancy needed.

    Hint: Make a big batch at the beginning of the week and you'll be good to go!

    Ingredients

    • quick-cooking oats
    • butter
    • cocoa powder
    • Vanilla essence or vanilla extract
    • grated coconut
    • chocolate hazelnut spread
    • chocolate chips

    Instructions

    1. Mix the oats with the cocoa
    2. Add the warm melted butter, vanilla, Nutella, and chocolate chips
    3. Mix all ingredients; let it rest in the refrigerator for 30 minutes.
    4. Make balls and pass them through grated coconut.

    These no bake energy bites are a delicious snack with simple ingredients.

    Tips

    • Start with room temperature butter.
    • Use a small cookie scoop to make uniform balls.
    • Store your chocolate coconut balls in an airtight container in the fridge. They'll last about 5-6 days if properly stored.

    Variations

    For extra protein, add a scoop or two of your favorite protein powder.

    If you like a little bit of sweetness, add a teaspoon of pure maple syrup or honey. Medjool dates are a great way to add a sweet flavor and have loads of health benefits. If using dates, I suggest placing all the ingredients in the food processor to combine.

    Add a teaspoon of chia seeds for loads of nutritional benefits. Hemp seeds, sunflower seeds, and chopped nuts add healthy fats, too.
