    BBQ Chicken Tostadas with barbecue sauce, tender chicken, and melty cheese on top of crispy corn tortillas are an easy meal for the whole family.

    With just 5 minutes of prep, this recipe is perfect for super easy weeknight dinners.

    If you are looking for a quick and easy recipe to whip up for dinner, you’ve got to try these BBQ Chicken Tostadas. All you have to do is use your slow cooker to whip up the barbecue chicken, and then pop your tostadas in the oven for a few minutes! It’s that easy!

    With a few minutes of easy prep, delicious shredded barbecue chicken, and your favorite cheese piled high on a tasty corn tortilla, what’s not to love about this easy recipe?

    Whenever I’m having a hectic week or need a busy yet tasty recipe for my family, this is one of my go-to meals! It’s so simple to make, and you can easily customize this recipe to your taste buds. Plus, it’s picky-eater approved! So what could be better than that?

    Ingredients

    You only need seven simple ingredients that you probably already have at home to make this easy BBQ Chicken Tostadas recipe!

    • corn tortillas
    • leftover Crockpot BBQ Chicken
    • BBQ sauce
    • mozzarella cheese
    • red onion
    • roma tomato
    • chopped cilantro (optional)

    Instructions

    Here's how easy it is to make BBQ chicken tostadas:

    1. Preheat the oven to 400 degrees.
    2. Put corn tortillas on a baking sheet.
    3. Spread ½ Tablespoon of BBQ sauce on each tortilla.
    4. Top each tostada with ⅛ cup mozzarella cheese.
    5. Add ¼ cup of Crockpot BBQ chicken on top of each tostada.
    6. Add 1 tablespoon red onion, 1 tablespoon tomato, and 1 tablespoon cilantro on top of each tostada.
    7. Bake for 6-8 minutes or until the cheese has melted.
    8. To crisp, turn the oven to Broil and broil for 1-2 minutes.

    This is a great way to use up your leftover shredded chicken so that no meat goes to waste!

    Serving Suggestions

    Drizzle on a little extra barbecue sauce or ranch dressing and serve with pico de gallo or homemade guacamole. These easy BBQ chicken tostadas are also great with refried beans, black beans, or a dollop of sour cream.

    Recipe Variations

    Even picky eaters will like this easy dinner recipe because you can add your favorite toppings. Instead of tomatoes, onion, and cilantro, you can use fresh salsa.

    If you're not a fan of cilantro, serve with fresh parsley or a little bit of sliced green onion.

    Cheddar cheese, a Mexican cheese blend, or even feta cheese are all delicious for this recipe also.

    These could also be made with leftover pulled pork, a grocery store rotisserie chicken, or leftover chopped chicken breasts - just toss with a little extra BBQ sauce.

    • 1 cup cooked Crockpot BBQ Chicken
    • 4 tablespoons BBQ sauce
    • ½ cup shredded mozzarella cheese divided
    • 4 tablespoons diced red onion divided
    • 4 tablespoons diced roma tomato divided
    • 4 tablespoons chopped cilantro or parsley divided
