    Meal Plan 48 includes oven roasted pork tenderloin, easy chicken and rice, slow cooker lasagna, hearty soup, and my favorite casserole.

    December 4 - Italian Chicken Meatballs

    Italian chicken meatballs are delicious with baked spaghetti squash or try it with zucchini noodles

    This is a great low-carb meal. You could also use our spicy chicken meatball recipe, which is keto-friendly.

    December 5 - Slow Cooker Lazy Lasagna

    Slow Cooker Lasagna

    This slow cooker lazy lasagna is one of my favorite comfort food meals!

    I just love this all-in-one meal made in the crock pot.

    Serve with store-bought or semi-homemade Italian breadsticks.

    You could also serve this with buttery dinner rolls or focaccia.

    December 6 - Chicken and Rice

    If you have an instant pot, you're going to love this super easy chicken and rice recipe.

    I love it with carrots, but you could toss in some frozen peas, corn, or broccoli if you prefer.

    Try it with our cheesy herb bombs on the side!

    December 7 - Chicken Sausage Soup

    Italian-style chicken sausage soup is a great way to use up leftover veggies and pasta, but you can also just grab precut veggies from the produce department if you're short on time.

    If you love chicken sausage, you also have to try our chicken sausage sheet pan dinner.

    December 7th is National Cotton Candy Day - try our cotton candy mocktails or cotton candy cookies to celebrate!

    December 8 - Puff Pastry Chicken

    While this makes a great appetizer, puff pastry chicken is one of my go-to meals, too.

    Serve it with a side salad for a great weeknight dinner option.

    If you love puff pastry, be sure to try our puff pastry pizza pockets, buffalo chicken puff pastry, and bacon puff pastry twists.

    December 9 - Roasted Pork Tenderloin

    I love oven roasted pork tenderloin and red skin mashed potatoes for dinner.

    If you're short on time, chop up a handful of potatoes, carrots, and other root veggies and roast them right alongside the tenderloin.

    December 10 - Potato Sausage Casserole

    My mom's recipe for potato sausage casserole will forever be my most favorite casserole of all time!

    It's creamy and cheesy with just the right amount of spice from the sausage. Don't skip the cracker topping, it's so good!

    Snacks & Appetizers

    I love making these spinach puff pastry cups for parties. They are easy to assemble ahead of time and then bake when company arrives.

    Our olive tapenade crostini is another fabulous party appetizer that can be made ahead of time.

    These asparagus puff pastry bundles are a cinch to make and taste delicious, too.

    Dessert

    These festive peppermint frosted brownies are great for holiday parties and potlucks. Not only is the recipe delicious and beautiful, but it is also easy.

    Breakfast

    You're going to love this easy frittata recipe. It actually uses leftovers from our sausage sheet pan dinner, but I love that you can use a variety of leftovers with in this recipe.

    This hearty frittata reheats beautifully in the microwave so it's a great make-ahead recipe.

    I like to serve this with fruit salad. This is also a wonderful holiday brunch item. Try it along with a holiday ham and butter swim biscuits!
