    For the coconut flakes, I like to use this unsweetened shredded coconut.  I don't mind buying it in bulk since I use it for making granola bars and in cookie recipes frequently. However, if you only want to buy a little, you can find smaller packages at Whole Foods or Trader Joes.

    Pina Coladas are a sweet cocktail made with rum, pineapples, and coconuts. They have been the national drink of Puerto Rico since 1978! Yup! Pina Coladas were first created in Puerto Rico in the 1970s.

    What is Cream of Coconut?

    Cream of coconut is a smooth, thick liquid made from fresh coconuts. This is what helps gives the pina colada smoothie its wonderful texture and flavor. It is often found in the ethnic foods section of your grocery store.

    What can I substitute for Cream of Coconut?

    If you need a substitute for cream of coconut you can use ½ cup light cream plus ⅛ teaspoon coconut extract for this recipe.
    Alternatively, you can use coconut milk or coconut water if you prefer.

    Recipe Variations

    • Do you like your pina colada smoothies to be more like a slushie? Then feel free to add more ice! If you prefer to have something that can easily be slurped through a pretty straw, use less ice. It's all up to you!
    • Add a fresh or frozen banana for extra potassium, which helps to make this a great healthy breakfast option.
    • For a healthier version, use coconut milk or coconut water instead of cream of coconut.
    • Now should you decide you want to up the ante with this smoothie, you can add in 3 ounces of golden or coconut rum and you have an adult-only treat!
    • Pour this smoothie mixture into a popsicle mold and pop it into the freezer. A couple of hours later you'll have healthy pina colada ice pops!

    • 4 ounces cream of coconut
    • 1 cup fresh pineapple chopped

      What is cream of coconut? Can it be purchased in any grocery store? I am presently in PR so would love to try this recipe.

        Cream of coconut is a smooth, thick liquid made from fresh coconuts. It is thick and very sweet and maybe found in the ethnic foods section of your grocery store; look for Goya or Coca Real brands. If you need a substitute for cream of coconut you can use 1/2 cup light cream plus 1/8 teaspoon coconut extract for this recipe. Enjoy!
