    This sweet potato bundt cake is the best way to make a delicious and flavorful pound cake perfect for the holiday season.

    If you love the flavors of sweet potato casserole and the mouthwatering texture of pound cake, you will love this incredible cake! You can use this easy recipe for any holiday party or dinner or as a fun treat during the holiday season.

    • granulated sugar
    • unsalted butter
    • eggs
    • vanilla extract
    • sweet potatoes
    • all-purpose flour
    • baking powder
    • baking soda
    • cinnamon
    • nutmeg
    • salt
    • confectioners’ sugar
    • cream cheese
    • maple syrup
    • heavy cream

    🔪 Instructions

    1. Preheat your oven to 350F degrees.
    2. Spray a 12-cup bundt pan using nonstick cooking spray.
    3. Mix the dry ingredients in a medium bowl. Set aside.
    4. In another large bowl, beat the butter and sugar on high for about 1-2 minutes until light and fluffy; then add the eggs one at a time.
    5. Add the cooked and mashed sweet potato and vanilla extract; mix well.
    6. Add the flour mixture a little at a time to the wet ingredients until combined.
    7. Pour batter into the prepared bundt pan.
    8. Bake for 45-50 minutes in the preheated oven or until a knife or skewer comes out clean from the center of the cake.
    9. Allow the cake to cool for about 10 minutes, then remove it from the pan and place it on a serving plate or wire rack.

    For the Maple Icing

    1. In a small bowl, combine the cream cheese, powdered sugar, and maple syrup.
    2. Mix together on medium speed using an electric mixer and add milk or heavy cream until it reaches it becomes a thick glaze.
    3. Once the cake has cooled completely, spoon or pour over the top of the cake.

    ⭐ Tips

    ✔️ The fastest way to cook sweet potatoes is in the microwave. Use a fork to prick a few holes in the sweet potatoes and microwave for 5 minutes. Check them, turn them, and microwave for an additional 5 minutes or as needed. You can then easily scoop out the flesh and mash it.

    ✔️ Start with all your ingredients at room temperature for best results.

    ✔️ Be sure to grease your bundt pan really well. The more nooks and crannies, the more places the cake can get stuck in the pan.

    🍰 Storage

    To Store: Leftover pound cake should be stored in an airtight container. It can be kept at room temperature or in the fridge. (These are my favorite airtight containers.)

    📖 Variations

    The first time you try any new recipe we recommend that you make it just as it is written on the recipe card since that is how the delicious recipe has been tested. However, the next time you make our sweet potato cake, you might want to try one of these ideas:

    For an extra moist pound cake, add 2 tablespoons of sour cream to the cake batter.

    Add a cup of chopped walnuts or pecans to the top of the glazed cake.

    If you have pumpkin pie spice or apple pie spice on hand, you can use that instead of the individual nutmeg and cinnamon.

    Sweet Orange Icing: Instead of maple syrup in the icing, use orange juice and orange zest. You could also use cream cheese frosting.

    • Add the dry mixture a little at a time to the sweet potato mixture until just combined.
    • Using a spatula, scrape down the bowl and ensure no dry clumps in the sweet potato mixture.
    • Pour batter into the prepared bundt pan.
    • Bake for 45-50 minutes in the preheated oven or until a knife or skewer comes out clean from the center of the cake.
    • Allow the cake to cool for about 10 minutes, then remove it from the pan and place it on a serving plate or wire rack.

    To make the glaze:

    • Allow the cake to cool completely at room temperature for 30 minutes before adding the glaze.
    • In a separate bowl, beat together the cream cheese, powdered sugar, and maple syrup.
      1 cup sifted confectioners’ sugar, 2 tablespoons maple syrup, 2 tablespoons cream cheese
    • Mix together on medium speed using an electric mixer and add milk or heavy cream until it reaches it becomes a thick glaze.
      2-4 tablespoons heavy cream or milk
    • Spoon or pour over the top of the cake.
