Preheat your oven to 350F degrees.
Spray a 12-cup bundt pan using nonstick cooking spray.
In the bowl of a stand mixer, beat the butter and sugar on high for about 1-2 minutes until light and fluffy.

Add the eggs one at a time, and beat to incorporate after each egg.

Add the mashed sweet potato and vanilla extract to the mixture and mix until well incorporated.

Mix the dry ingredients in a large mixing bowl.
3 cups all purpose flour, 2 teaspoons baking powder, ½ teaspoon baking soda, 1 teaspoon ground cinnamon, ½ teaspoon ground nutmeg, ¼ teaspoon salt
Add the dry mixture a little at a time to the sweet potato mixture until just combined.
Using a spatula, scrape down the bowl and ensure no dry clumps in the sweet potato mixture.
Pour batter into the prepared bundt pan.
Bake for 45-50 minutes in the preheated oven or until a knife or skewer comes out clean from the center of the cake.
Allow the cake to cool for about 10 minutes, then remove it from the pan and place it on a serving plate or wire rack.
