Sweet Potato Pound Cake Recipe with Maple Glaze

Ingredients

  • 2 cups granulated sugar
  • 1 cup butter softened
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 2 cups cooked and mashed sweet potatoes 4-5 medium potatoes
  • 3 cups all purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt

Maple Glaze

  • 1 cup sifted confectioners’ sugar
  • 2 tablespoons maple syrup
  • 2-4 tablespoons heavy cream or milk
  • 2 tablespoons cream cheese

Instructions

To make the cake:

  • Preheat your oven to 350F degrees.
  • Spray a 12-cup bundt pan using nonstick cooking spray.
  • In the bowl of a stand mixer, beat the butter and sugar on high for about 1-2 minutes until light and fluffy.

  • Add the eggs one at a time, and beat to incorporate after each egg.

  • Add the mashed sweet potato and vanilla extract to the mixture and mix until well incorporated.

  • Mix the dry ingredients in a large mixing bowl.
    3 cups all purpose flour, 2 teaspoons baking powder, ½ teaspoon baking soda, 1 teaspoon ground cinnamon, ½ teaspoon ground nutmeg, ¼ teaspoon salt
  • Add the dry mixture a little at a time to the sweet potato mixture until just combined.
  • Using a spatula, scrape down the bowl and ensure no dry clumps in the sweet potato mixture.
  • Pour batter into the prepared bundt pan.
  • Bake for 45-50 minutes in the preheated oven or until a knife or skewer comes out clean from the center of the cake.
  • Allow the cake to cool for about 10 minutes, then remove it from the pan and place it on a serving plate or wire rack.

To make the glaze:

  • Allow the cake to cool completely at room temperature for 30 minutes before adding the glaze.
  • In a separate bowl, beat together the cream cheese, powdered sugar, and maple syrup.

  • Mix together on medium speed using an electric mixer and add milk or heavy cream until it reaches it becomes a thick glaze.

  • Spoon or pour over the top of the cake.
