    This is a great treat for the kiddos, too. This serving size is more appropriate for adults and teens, but I find that splitting between my two children is the perfect amount. Mine love the whipped cream topping especially!

    This recipe is one of our favorite low calorie smoothie recipes!

    Since my birthday is in October, Fall has always been my most favorite season. I love the sunny days with the cool breezes and the beautiful colors of the trees in New England.

    Here in NH, we've had unseasonably warm weather these last few weeks, and while I'm sad to see summer go, I'm sort of craving one of those crisp Fall days at the same time.

    Ingredients

    • frozen banana
    • vanilla yogurt Greek or regular vanilla yogurt
    • pumpkin pie spice
    • skim or almond milk
    • ground cinnamon
    • pure maple syrup
    • honey
    • canned or homemade pumpkin puree 
    • store-bought or homemade whipped cream (optional)

    Instructions

    • Combine all of the ingredients in a blender.
    • Process the mixture until smooth.
    • For an icy smoothie, add 1 cup of ice to the blender.
    • Top with whipped cream if desired.

    FAQ About Pumpkins

    Is pumpkin puree healthy?

    Using pumpkin puree is a great way to add more nutrition to any recipe. Did you know it can be used as a replacement for oil in baking recipes? Pumpkin is a high-antioxidant food that includes loads of vitamin A.

    "The bright orange color of pumpkin is a dead giveaway that pumpkin is loaded with an important antioxidant, beta-carotene. Beta-carotene is one of the plant carotenoids converted to vitamin A in the body. In the conversion to vitamin A, beta carotene performs many important functions in overall health." Source

    Is pumpkin puree the same as pumpkin pie filling?

    Pumpkin puree and pumpkin pie filling are not the same things. Pumpkin pie filling is sweetened and often contains spices such as cinnamon and allspice. However, Pumpkin puree is just pure pumpkin and nothing else.
    For this recipe, I like using homemade or canned pumpkin puree.

    How do you puree a pumpkin?

    If you prefer to use fresh pumpkin, here's what you need to do:

    1. Preheat oven to 325-degrees F.
    2. Cut the pumpkin in half from the stem to base.
    3. Remove seeds and pulp.
    4. Cover each half with foil.
    5. After that, place the halves on a baking sheet with the foil side up.
    6. Bake in the preheated oven, 1 hour, or until tender.
    7. Scrape pumpkin the tender pumpkin from shell halves.
    8. Puree in a blender.
    9. I recommend straining it to remove any remaining stringy pieces.
