    Granola bars might just be the solution to half the problems busy moms face in a day. Seriously.

    • Don’t have time to eat breakfast? These granola bars are there to help out!
    • Are you getting hungry while on the go but don’t have time to stop for a meal? These granola bars are way better than a pack of pretzels.
    • Are your kids hungry and won’t stop complaining? These granola bars are here to avoid meltdowns.

    Okay, so much I'm exaggerating, but you are going to just love this easy granola bar recipe. They're quick, delicious, and totally kid-friendly!

    I particularly love this recipe because they include heart-healthy almonds, which I adore. Almonds are a great source of vitamins, minerals, and protein so they're a great addition to granola bars. However, if you prefer, you could substitute the almonds for walnuts, pecans, or even macadamia nuts.

    🧂 Ingredients

    • Quick oats
    • Creamy peanut butter
    • Honey
    • Vanilla extract
    • Mini chocolate chips
    • Sliced almonds
    • Coconut flakes

    🔪Instructions

    This recipe makes 10-12 bars and I usually double it.

    1. Line an 8”x8” baking pan with parchment paper.
    2. Add oats, peanut butter, honey, and vanilla to a large bowl and stir
    3. Add chocolate chips, almonds, and coconut.
    4. Dump the mixture into a baking pan, and press down firmly.
    5. Freeze.
    6. Remove from the freezer, and lift the parchment paper out of the baking pan, and place your sheet of bars on a cutting board.
    7. Cut into bars.

    My easy granola bars do not need refrigeration. Just store in an air-tight container on your counter. (These are my favorite airtight containers.)

    When it comes to this easy granola bars recipe, the possibilities for variations seem endless! Here are some suggestions:

    • Instead of honey, substitute maple syrup or agave nectar.
    • Use chunky peanut butter instead of creamy for some extra crunch.
    • Omit the mini chocolate chips if you like and use candy-coated sesame seeds or mini M&M candies.
    • Add ½ cup of dried fruit such as cranberries, chopped apricots, raisins or golden raisins, blueberries or cherries
    • Substitute pecans, walnuts or even cashews for the almonds.
    • Swap out the coconut flakes for puffed rice or crispy rice cereal.
    • Add 1 tablespoon wheat germ and/or chia seeds for extra nutrition.
