    Cinnamon Sugar Waffles taste so much like churros that I often refer to them as my Churro Waffles!

    Nothing quite beats light and fluffy waffles with crispy edges. The buttermilk in these churro waffles provides a tender center much like you’d expect from a donut while the heat from the waffle iron helps to ensure that any excess moisture is quickly evaporated, giving you that crunch as you bite into your cinnamon sugar waffles.

    The cinnamon sugar-dusted over these waffles adds the finishing touch - subtle yet not to be skipped, caramelizing against these freshly cooked waffles that’ll have you making multiple batches.

    To me, these taste just like warm churros, but in waffle form!

    Waffle Ingredients

    • Buttermilk
    • Eggs
    • Canola oil (or melted unsalted butter)
    • Vanilla
    • Brown sugar
    • All-purpose Flour
    • Baking powder
    • Salt

    • Unsalted butter, melted
    • White Sugar
    • Cinnamon

    1. Add flour, brown sugar, salt, and baking powder to a large bowl and whisk.
    2. Add canola oil, eggs, and buttermilk to the dry ingredients.
    3. Mix until well combined.
    4. Add the churro waffle batter to your preheated waffle iron (the amount you add is determined by the size of your waffle iron.)
    5. Brush waffles with melted butter and toss in the cinnamon sugar mixture coating each side of the waffle.

    Buttermilk Substitute

    If you do not have buttermilk on hand, you can make your own buttermilk substitute. Choose which method is right for you, then mix it all together in a large measuring cup.

    • 2 cups buttermilk = 2 cups plain yogurt
    • 2 cups buttermilk = 1½ cups sour cream + ½ cup water or milk
    • 2 cups buttermilk = 2 cups milk + 2 tablespoons lemon juice
    • 2 cups buttermilk = 2 cups milk + 2 tablespoons distilled white vinegar

    ⏲️ Storage

    To Store: These can be kept in an airtight container for up to a week. I recommend wrapping them individually with a paper towel or parchment so they don't stick together. (These are my favorite containers.)

    To Reheat: You can easily reheat these in the toaster, or on a sheet pan in the oven at 350 for just a few minutes.

    To Freeze: Place parchment paper between each waffle and store in an airtight container for 3 to 6 months.

    To Thaw: Thaw on the counter until they come up to room temperature, or overnight in the fridge.

    ⭐ Tips

    ✔️I’ve used canola oil for these waffles instead of butter, which I tend to find yields a crispy churro waffles.

    ✔️If you’re cooking a big batch of these waffles, a good way to prevent those already made from becoming soggy is to lay them on a baking sheet.

    ✔️ While you want a smooth waffle batter, make sure that you don’t over mix it otherwise you can end up with dense and heavy waffles instead of light, fluffy, and crispy waffles due to gluten development!

    Here are some questions (and answers!) readers often ask about how to make the best waffles.

    Are waffles better with oil or butter?

    I’ve personally found that waffles achieve a crispier texture when made with oil such as canola oil as opposed to when making the batter with butter. Oil-based fats help to thin out the waffle batter better than solid fats like butter, giving the cooked waffle a crispier outer texture.

    What is cinnamon sugar made of?

    Cinnamon sugar is simply a mixture of ground cinnamon and sugar! It’s often used on sweet treats such as donuts and waffles as a kind of sugary dusting topping but can also be used as a mix in cream cheese frostings, glazes, or added to a delicious streusel-like topping for muffins and desserts.

    What do churros taste like?

    Churros typically taste like a classic cinnamon donut (in fact, their centers are pretty much like that of a soft donut) but differ in that they are elongated in shape and have ridges that crisp up beautifully.  

    A classic churro is covered with cinnamon sugar and is often enjoyed with sweet sauces that you can dip these finger-food treats into! 

    Why are my homemade waffles not crispy?

    If you’re struggling to make waffles that are light and crispy, it’s most likely to do with moisture. You need enough moisture in your batter so that your waffles come out tender but not too much that they lose that sought-after crispiness after a few minutes of being removed from the waffle iron. 

    Three ways you can ensure crispy waffles include:
    1. Make sure that the waffle iron is hot so that the batter starts to sizzle immediately after being poured into the mold and so that the moisture in the batter starts to evaporate.
    2. Buttermilk can sometimes create a heavy batter that won’t allow your waffles to crisp. If this is the case, simply replace half of the buttermilk in this recipe for milk.
    3. While you’re making waffles in batches, place your resting waffles in the oven at 250℉ and bake them on a wire rack placed on top of a baking sheet for 5-10 minutes maximum. The elevated waffles on the wire rack will allow air to circulate to all sides of the waffles.

    What can I put on waffles besides syrup?

    There are so many things you can place on your waffles apart from syrup! Drizzle sweet sauces like caramel sauce or hot fudge sauce, add compound butter like this Maple Butter, Cranberry Butter, or Brown Sugar Butter!

    Apart from those delicious ideas, ice cream, whipped cream or even this Blackberry Cream Cheese Spread would make the perfect addition to your waffles, adding extra decadence.

    📖 Variations

    • If you aren’t in the mood for making waffle batter from scratch then make use of Rhodes cinnamon rolls or even Pillsbury Grands buttermilk canned biscuits.
    • Make cinnamon sugar chocolate chip waffles by adding chocolate chips in the waffle batter.
    • If you have a square waffle iron then you can make cinnamon sugar waffle sticks (similar to the concept of churros) by cutting your cooked waffles in strips and adding them to a platter with your choice of sweet dipping sauce as an interactive dessert with friends!

    🍴 Serving Suggestions

    These sweet waffles are pretty perfect as is, but you can serve them maple syrup and flavored butters like Maple Butter, Cranberry Butter, Brown Sugar Butter, or Texas Roadhouse Cinnamon Honey Butter. This Blackberry Cream Cheese Spread or Homemade Pumpkin Butter would definitely add a little extra goodness, too.

    If you want to really pile on the decadence (if these are for dessert) try a scoop of vanilla ice cream or whipped cream topped with hot fudge sauce, dulce de leche, or caramel sauce and a few fresh berries!

    Waffle Mix

    • 2 cups buttermilk
    • 3 eggs
    • ⅓ cup canola oil or melted unsalted butter
