    So waffles are my jam. Seriously it is something I could eat every other day of the week. I love all of the combinations you can add to waffles. We love these strawberry banana waffles and typically we only do waffles on the weekends.

    I really have no time to cook them during the weekday mornings before school. When I do make them the kids think is is a special occasion and they get all excited about it! Props to all of you who can make more than milk and cereal because that is what we normally have every single day!

    For this round of waffles I decided to make them blueberry and lemon flavored. I knew how much you loved these Blueberry Mousse Puff Pastry Cups so I figured I would stick with a flavor that I knew you would enjoy! Although I think adding chocolate chips would be a good idea as well!

    Shopping List for Blueberry Waffles

    • sprouted wheat flour
    • 1 egg
    • 1¼ cups lukewarm milk
    • ¼ cup lemon juice
    • 1 5.3 oz. cup Stonyfield Grassfed Blueberry Greek yogurt
    • ¼ cup blueberries
    • lemon zest

    So I made these waffles with sprouted flour. It reminds me of whole grain flour but it leaves my waffles fluffy and light. Even using all purpose flour doesn't normally leave them so light.

    To make these blueberry lemon waffles, you really only need a few ingredients. Most you will already have at home. Two you may have to get, the flour and greek yogurt. When you make the mix you should definitely let the mixture sit for about 10 minutes. I am always too hungry to wait but it will be worth it in the end!

    How to Make Blueberry Waffles

    1. Start by preheating the your waffle oven per the manufacture's instructions.
    2. In a mixing bowl, add together the flour, baking powder, salt and sugar in mixing bowl.
    3. Then in another bowl, mix the egg, milk, lemon juice and oil.
    4. Next, add the wet ingredients to the dry ingredients and stir to combine.
    5. Gently fold in the yogurt and the blueberries.
    6. Now allow the batter to rest 10 minutes.
    7. Spray the iron with non-stick cooking spray, then pour the amount of batter recommended by the manufacturer onto the center of the iron.
    8. Close the lid of the iron and bake for 3-5 minutes or until the waffle is golden brown.

    Blueberry Waffle Recipe Variations

    Because we test all our recipes, we recommend that you make them once just as it is without substitutions or changes. Sometimes variations can go awry. Making our Blueberry Waffle recipe as we have tested it will yield the best results. If you really want to get creative, here are some ideas for variations that might work well. (Please note, we have not tested these variations).

    • Substitute the blueberries for whole blackberries or raspberries, or chopped strawberries.
    • If you prefer, use all-purpose or whole wheat flour instead of sprouted flour.

    • 1½ cups sprouted wheat flour
