    I love any recipe that utilizes leftovers to make an easy and fresh new take on a meal. These zucchini boats take advantage of seasonal produce and are so easy to make!

    There are so many different ways to make stuffed zucchini boats with ground turkey, Italian sausage, and the list goes on and on.

    However, this is the best way to make easy stuffed zucchini boats because it starts with leftover pulled pork. Instead of tomato sauce, we're using barbecue sauce. You can use any kind you like.

    🧂 Ingredients

    To make these delicious zucchini boats, here are the simple ingredients you'll need:

    • olive oil
    • salt and black pepper
    • pulled pork
    • large zucchinis
    • BBQ sauce
    • shredded cheese - I like using cheddar cheese

    🔪 Instructions

    1. Preheat the oven to 400F.
    2. Prepare a 9x13 casserole dish with nonstick cooking spray.
    3. Toss the pulled pork with your favorite BBQ sauce; set aside.
    4. Slice fresh zucchini in half lengthwise and scoop out the middle of the vegetable with a spoon leaving about ½ inch along the outside to create a “boat.”
    5. Place the zucchini into the casserole dish and brush with olive oil.
    6. Season with salt and black pepper.
    7. Put the casserole dish into the oven and bake for 8 to 10 minutes or until slightly softened.
    8. Spoon the pulled pork into the zucchini boats, pressing down.
    9. Pile the extra mixture on top until the boats are overflowing slightly.
    10. Top your zucchini boats with the cheese.
    11. Bake for 10-15 minutes in the preheated oven until the cheese is melted and zucchini is tender.
    12. Garnish, if desired, with sliced green onions.

    • melon baller - to scoop out the zucchini pulp. While you can use a spoon, I find the melon baller really effective!

    🍲 Storage

    To Store: Leftovers should be stored in an airtight container in the fridge. These zucchini boats will last 3-4 days if stored properly. (These are my favorite airtight containers.)

    To Reheat: Microwave individual portions in 30 second intervals until heated throughout.

    It's a great option for any busy weeknight, especially when fresh summer zucchini are in season.

    📖 Variations

    • This zucchini boat recipe can be made with shredded beef, shredded chicken, or rotisserie chicken if you like.
    • Monterey Jack, Gouda, and Mozzarella cheese are all great melting cheeses that would taste amazing in this recipe.
    • For a little bit of crunch, add bread crumbs on top before baking.

    Serve your healthy zucchini stuffed zucchini boats with a side of garlic bread, black beans, or cauliflower rice.

    These are also excellent with a little bit of pickled red onion, chopped fresh tomatoes, sliced green onions, or sour cream on top. You could also serve with extra BBQ sauce.
