- 1 cup shredded cheddar cheese

Preheat the oven to 400 degrees.
Prepare a 9x13 casserole dish with nonstick cooking spray.
Slice zucchini in half lengthwise and scoop out the middle of the vegetable with a spoon leaving about ½ inch along the outside to create a “boat.”

Place the zucchini into the casserole dish and brush with olive oil.

Put the casserole dish into the oven and bake for 8 to 10 minutes or until slightly softened.
Toss the pulled pork with your favorite BBQ sauce.

Spoon the pulled pork into the zucchini boats, pressing down.

Pile the extra mixture on top until the boats are overflowing slightly.
Top your zucchini boats with the cheese.

Bake for an additional 10 to 15 minutes until the cheese is melted and zucchini is tender.
