Ingredients

  • 3 zucchini
  • 1 tablespoon olive oil
  • 1 lb pulled pork
  • 1 cup shredded cheddar cheese
  • salt and black pepper to taste
  • sliced green onions for garnish
  • BBQ sauce to taste

Instructions

  • Preheat the oven to 400 degrees.
  • Prepare a 9x13 casserole dish with nonstick cooking spray.
  • Slice zucchini in half lengthwise and scoop out the middle of the vegetable with a spoon leaving about ½ inch along the outside to create a “boat.”

  • Place the zucchini into the casserole dish and brush with olive oil.

  • Season with salt and black pepper.

  • Put the casserole dish into the oven and bake for 8 to 10 minutes or until slightly softened.
  • Toss the pulled pork with your favorite BBQ sauce.

  • Spoon the pulled pork into the zucchini boats, pressing down.

  • Pile the extra mixture on top until the boats are overflowing slightly.
  • Top your zucchini boats with the cheese.

  • Bake for an additional 10 to 15 minutes until the cheese is melted and zucchini is tender.
  • Garnish, if desired, with sliced green onions.
