- 1 15.25oz box red velvet cake mix
- ⅓ cup vegetable oil
- 2 eggs
- ½ cup powdered sugar

Preheat the oven to 350F. Line a large cookie sheet with parchment paper or a silpat mat.
Combine the red velvet cake mix oil, and eggs until mixed. The cookie dough will be very thick and sticky.
Put the powdered sugar in a separate bowl.
Use a 1 ounce cookie scoop (or tablespoon) to scoop cookies out. Roll into balls with your hands.
Roll the cookie dough ball into the powdered sugar and coat all sides.
Place them onto the prepared baking sheet.
Bake for 10-12 minutes until the edges are set and the tops are crinkled.
Remove from the oven and let rest 5 minutes before transferring to a cooling rack.
