Italian Green Bean Salad

Ingredients

  • 2 pounds fresh green beans trimmed
  • ½ cup roasted red peppers sliced
  • ½ cup fresh basil leaves thinly sliced
  • 3 tablespoons almond slivers toasted

For the dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  • Fill a large pot with salted water and bring to a boil.
  • Once boiling, drop your beans into the water.
    2 pounds fresh green beans
  • Cook for 8-10 minutes or until bright green and crisp.
  • Immediately drain the beans and rinse them in cold water to stop the cooking process.
  • Make sure to drain well.
  • In a large bowl, toss together your fresh green beans, roasted red peppers, basil, and almonds.
    ½ cup roasted red peppers, 2 tablespoons olive oil, ½ cup fresh basil leaves
  • In a smaller bowl, whisk olive oil, lemon juice, garlic powder, salt, and black pepper in a smaller bowl until combined.
    3 tablespoons almond slivers, 1 tablespoon fresh lemon juice, ¼ teaspoon garlic powder, Salt and black pepper
  • Pour your smaller bowl into the larger one and toss to coat.
  • Refrigerate until ready to serve.
