Hummus Pinwheels

Ingredients

  • 4 garden spinach herb wraps or similar large soft tortillas
  • 10 ounces hummus (about 1¼ cups)
  • 2 cups purple cabbage thinly sliced
  • 1 large bell pepper diced
  • 2 large carrots shaved into ribbons or grated

Instructions

  • Spread the hummus on the wrap.
    4 garden spinach herb wraps, 10 ounces hummus
  • Top with veggies.
    2 cups purple cabbage, 1 large bell pepper, 2 large carrots
  • Roll tightly.
  • Chill for 2 hours.
  • Slice with a sharp knife.
