Preheat oven to 375°F.
Grease a 9x13 baking dish.
Cook ground beef and onions. Drain the grease.
2 pounds lean ground beef, 1 cup chopped onions
Stir in sour cream, seasonings, broth, and half of the cheese.
2 teaspoon finely minced garlic, 1 cup beef broth or stock, 1 cup sour cream, 2 teaspoons dried oregano, Kosher salt and freshly ground black pepper to taste, 2 cups shredded cheddar cheese
Transfer the beef mixture to a greased 9x13 casserole dish.
Top with shredded hash browns.
1 30 ounce bag frozen shredded hash browns, thawed
Bake for 40-45 minutes until the potatoes are golden brown and crispy.
Sprinkle the remaining cheese over the top and return to the oven for 5 minutes until melted.
2 cups shredded cheddar cheese
Top with scallions if desired.
