Cotton Candy Cookies

Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 ½ teaspoon cotton candy flavoring
  • Pink food coloring
  • Blue food coloring
  • Powdered sugar or flour for rolling

Instructions

  • Preheat the oven and line two baking sheets with parchment paper.
  • Whisk together the dry ingredients.
    3 cups all-purpose flour, 2 teaspoons baking powder, ½ teaspoon salt
  • In another bowl, beat together the butter and sugar. (An electric mixer fitted with a paddle attachment is ideal, but a hand mixer will work also).

  • Add the egg and cotton candy extract. Be sure to scrape down the sides of the bowl.

  • Add the dry ingredients to the wet ingredients. The dough will be a little crumbly.
  • Turn the dough out onto a floured surface and divide the dough into two equal portions.
  • Knead the pink food coloring into one half of the dough and the blue food coloring into the other half.

  • Roll each dough ball out into a rectangle that is ¼ inch thick.
  • Carefully place one sheet of cookie dough on top of the other. Remove any air pockets by patting gently.
  • Starting from the long end, tightly roll the cookies up into a log shape.
  • Cut the cookie dough into ¼ inch slices. Place cookies onto the prepared cookie sheet.

  • Bake for 7-9 minutes at 350 degrees then transfer to a cooling rack.
  • Once the cookies are fully cooled, you can add icing or frosting if desired.
