This easy soup recipe takes very little effort but don't let that fool you. This flavorful soup is loaded with lots of vegetables, tender pasta, and ground beef.
1cupuncooked ditalini pastaor any small pasta or rice
1Bay Leaf
1teaspoonblack pepper
½ teaspoon kosher salt

Instructions
In a large soup pot or Dutch oven, cook the ground beef over medium-high heat.
1 lb lean ground beef
Drain the fat off the beef and return it to the pot.
Add in the ingredients for the base of the soup.
1 packet onion soup mix, 6 cups beef stock, 1 28 ounce can petite diced tomatoes, 1 Bay Leaf, 1 teaspoon black pepper, ½ teaspoon kosher salt
Bring the soup to a boil.
Reduce the temperature to medium heat and let the soup simmer for 15 minutes.
Mix in the pasta and veggies and cook for an additional 15 minutes until the pasta is tender.
2 cups frozen mixed vegetables, 1 cup uncooked ditalini pasta
Taste and adjust seasoning as needed. I often add a little bit of black pepper.

Cook the ground beef, drain grease, and add it to the crock with all the other ingredients except for the pasta. Cook on low for 6 hours. When there are about 30 minutes left in the cooking time, stir in the pasta or rice.
