Instructions
Brownies
Start by preheating the oven to 350-degrees F.
Grease a 9x9 baking pan with cooking spray. Alternatively, line an 8x8 baking pan with parchment paper - this will make it easy to remove the brownies from the pan.
Prepare the brownie mix according to the instructions on the box, adding in the peppermint extract.
1 box brownie mix, 1 teaspoon peppermint extract
Transfer the brownie mixture to the prepared pan. Sprinkle with mini chocolate chips if using.
¼ cup mini chocolate chips
Bake for the time indicated in the instructions on the box.
Remove them from oven and set the pan on top of a cooling rack - allow them to cool for at least 45 minutes.
Peppermint Icing
Add the butter to a stand mixer and beat until creamy.
½ cup Unsalted Butter
Add half the powdered sugar beat slowly.
1 cup Powdered Sugar
After that, add the milk or cream along with the peppermint extract.
3 tablespoons Whole Milk or Heavy Cream, ½ teaspoon Peppermint Extract
Next, add the rest of the powdered sugar and a pinch of salt and mix until well combined.
1 pinch Salt
The icing should be a little thin, so add a little more milk or cream, if needed.
Frost the cooled brownies and top with the crushed candy.
¼ cup Crushed Candy Canes or Peppermint Candies
