Apple Blueberry Muffins

Ingredients

  • 2 ¼ cups all purpose flour
  • ½ cup brown sugar packed
  • ½ cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 ½ cups fresh or frozen blueberries
  • 2 eggs
  • ¾ cup milk or almond milk
  • ½ cup unsalted butter melted and cooled
  • 1 teaspoon vanilla extract
  • 1 large Granny Smith apple diced

Instructions

  • Preheat your oven to 375F.
  • Prepare your muffin tin with muffin liners with a light spritz of cooking spray.
  • Combine the flour, sugars, baking powder, cinnamon, and salt in a large mixing bowl.

  • Stir in the blueberries.
    1 ½ cups fresh or frozen blueberries
  • Create a well in the center of the flour mixture and set aside.
  • In another separate bowl, whisk together the eggs until foamy.

  • Next, add the milk, melted butter, and vanilla until well blended.
    ¾ cup milk or almond milk, ½ cup unsalted butter, 1 teaspoon vanilla extract
  • Stir in the apple.
    1 large Granny Smith apple
  • Add your wet mixture to the flour mixture all at once. Stir until the ingredients are moistened. The batter will be lumpy.
  • Divide your batter between the prepared muffin cups filling each one almost to the top.
  • Bake for 18-20 minutes or until muffins are golden brown and a toothpick comes out clean.
  • Allow muffins to cool on a wire rack for about 5 minutes.
  • Remove them from the wrapper and serve warm!
