    When it comes to weeknight meals, I want something quick and easy, and tastes amazing, of course. Sheet pan dinners are perfect because they don't require a ton of prep time and clean-up is a breeze!

    When it comes to making a delicious dinner, it's hard to beat seasoned potatoes and sweet potatoes with green beans and juicy pork tenderloin.

    If a single pork tenderloin isn't enough for your family, go ahead and make more than one! Sometimes I made an extra one to put on salads for lunch.

    Here's what you need to make this sheet pan pork tenderloin recipe:

    • brown sugar

    How do you know if pork tenderloin is done?

    Check the pork with a meat thermometer for doneness. The USDA recommends cooking pork chops, pork loin, and pork tenderloin to 145°F.

    Are pork tenderloin and pork loin the same thing?

    Pork tenderloin and pork loin are different cuts of meat. It's important to know which one you have because pork tenderloin cooks much quicker than pork loin.
    Pork tenderloin is a narrow boneless cut of pork, however, pork loin is a wide piece that may or may not have a bone.

    Tips

    ✔️ Trim off any silver skin (fat) from the pork tenderloin if you like. I generally don't mess with it since pork is such a lean cut of meat.

    ✔️ Always place the meat thermometer into the thickest part of the meat to get an accurate reading.

    Storage

    To Store: Leftovers should be stored in an airtight container. (These are my favorite airtight containers.)

    To Reheat: Microwave individual portions in 30 second intervals until heated throughout.

    While it's best to cook and serve pork the same day, you can marinate it for up to 24 hours before cooking.

    Variations

    The first time you try any new recipe, we recommend that you make it just as it is written on the recipe card since that is how the delicious recipe has been tested. However, the next time you make our sheet pan pork tenderloin recipe, you might want to try one of these ideas:

    • I love Yukon gold potatoes, but this meal is also delicious with baby red potatoes.
    • Instead of brown sugar, you can use pure maple syrup or honey.
    • It's easy to customize this meal. Don't love green beans? Use Brussels sprouts or even zucchini. Just be sure to consider the cooking time for the veggies and adjust accordingly.

    Ingredients

    • 1 ½-2 pounds pork tenderloin
    • ⅓ cup brown sugar
    • 2 teaspoons teapsoons garlic
    • 2 tablespoons soy sauce
    • 2 tablespoons balsamic vinegar
    • ⅛ teaspoon crushed red pepper flakes
    • 1 ½ - 2 pounds Yukon potatoes and/or sweet potatoes
    • 4 cups green beans
    • 3 tablespoons olive oil
    • ½ teaspoon Italian Seasoning Mix
    • ½ teaspoon garlic powder
    • ⅓ cup grated parmesan cheese
    • salt and pepper to taste

    Instructions

    • Preheat the oven to 425F. Grease a sheet pan with olive oil or cooking spray.
    • On half of the sheet pan, make a little tray with aluminum foil. (This prevents the pork juices from making the veggies soggy).
    • Pat the pork tenderloin dry with paper towels and set into the tinfoil tray.
      1 ½-2 pounds pork tenderloin
    • In a small bowl, whisk together the sauce mixture. Pour the mixture over pork tenderloin and turn the pork tenderloin to coat it.
      ⅓ cup brown sugar, 2 teaspoons teapsoons garlic, 2 tablespoons soy sauce, 2 tablespoons balsamic vinegar, ⅛ teaspoon crushed red pepper flakes
    • On the other side of the baking sheet, place the potatoes. Drizzle with olive oil, toss to coat, then season with Italian seasoning, salt, pepper, and parmesan cheese.
      1 ½ - 2 pounds Yukon potatoes and/or sweet potatoes, 3 tablespoons olive oil, ½ teaspoon Italian Seasoning Mix, ½ teaspoon garlic powder, ⅓ cup grated parmesan cheese, salt and pepper to taste
    • Bake in the preheated oven for 45 minutes. Use tongs to turn the pork tenderloin every 10-15 minutes.
    • Use a meat thermometer to check the internal temperature. Once the pork tenderloin reaches 145F, pull it out of the oven and transfer it to a rimmed cutting board. Tend the tenderloin with foil.
    • While the pork rests, add the green beans to the baking sheet and return it to the oven.
    • Cook for 10 minutes until the green beans are tender crispy.

    For a deep golden color, I recommend removing the green beans from the tray, returning the pork tenderloin, and placing the pork on the sheet pan until it is broiled for 1-2 minutes. Be sure to watch it carefully so it doesn't burn!
