Our quick and easy Lasagna Soup recipe with lots of cheese is a hearty comfort meal with all the goodness of traditional lasagna without all the extra work!

What do you do when company shows up at the last minute around mealtime? If you're anything like me, you want a dish that looks impressive but is easy to make. This lasagna soup fits the bill perfectly.

You can make it with ingredients you probably already have on hand, and is ready in about 30 minutes! You'll love the great creamy tomato flavor of this soup, and so will your guests. Plus, the whole house will smell amazing!
But guess what? You may be surprised that this Lasagna Soup has neither ricotta cheese nor lasagna noodles in it! I know, I'm nuts for calling it a lasagna soup... I guess it is inspired by lasagna!

Ingredients
- olive oil - I find extra virgin olive oil flavor too strong for this recipe so I just use classic olive oil.
- sweet onion - finely diced
- large garlic cloves - you can never have too much of a good thing and minced garlic is essential in this recipe.
- ground beef - for this recipe, I find lean beef is best. 91% is what I use.
- tomato sauce - canned is fine, be sure it's just plain sauce with nothing else added.
- beef stock - regular or low-sodium both work.
- Garlic & Herb Italian Spice Mix - I like to use this homemade one, but store-bought is fine too.
- tomato paste - this will thicken the soup.
- bowtie pasta - cook this ahead of time.
- heavy cream - this helps to add to the rich flavor and silky texture.
- Parmesan cheese - not the stuff in the can - the real stuff!
- Chopped fresh basil for garnish
- salt and pepper to taste


With lots of basil, oregano, rosemary, parsley, and of course granulated garlic, this Garlic and Herb Italian Spice Mix is ideal for so many yummy Italian dishes!
Can I use fresh herbs instead?
The rule of thumb for using fresh herbs in place of dried herbs is to triple the amount called for in the recipe.
Can this soup be frozen?
The base of the soup can be frozen, but don't add the cheese and pasta until you're ready to serve it.
Recipe Variations
- Add 1 cup of frozen spinach (be sure to thaw and squeeze out the excess water first) to the soup for some added nutrition.
- Substitute ground sweet Italian sausage for the ground beef for a spicer version.
- For a lower fat recipe, use ground turkey instead of ground beef.
- To thicken the soup, you can also use ½ cup of squash or pumpkin puree.
- If you have leftover Homemade Meatballs, cut them into quarters and add those to the soup instead of the ground beef.
Storage
To Store: Store leftover soup in an airtight container for 3-4 days. (These are my favorite airtight containers.)
To Reheat: Individual bowls of soup can be microwaved in 30-second intervals until warmed throughout.

- 1 onion large, diced

- 2 15 oz cans tomato sauce plain unseasoned
- 4 cups beef stock

- 1 lb bowtie pasta boiled and drained
- ½ cup heavy cream
- 1 cup Parmesan cheese plus more for garnish

Instructions
- In a dutch oven, heat the olive oil.1½ tablespoons olive oil
- Sweat the onions until tender and translucent.1 onion
- Add the garlic and cook 2 minutes more.2 garlic cloves
- Add the ground beef and brown and season with salt and pepper to taste.1 lb lean ground beef, salt and black pepper
- Season with 1 tablespoon of the Italian seasoning.2 tablespoons Italian seasoning

- Simmer covered for 10 minutes.
