    Roasted Sweet Potatoes with maple syrup are a delicious weeknight side dish and also great for a holiday meal.

    Roasted sweet potatoes have such a unique flavor and are so rich and buttery, yet tender and tasty. They practically melt in your mouth as you bite into them!

    Sweet potatoes have to be one of the most versatile dishes that I’ve seen on a Thanksgiving table! There are so many different ways to enjoy them from sweet to savory. However, time and time again, I constantly find myself diving back into this simple roasted veggie! 

    This sweet side dish recipe requires only a few simple ingredients, which many of you probably already have at home, and a few steps to put together this deliciously sweet side dish!

    Ingredients

    • sweet potatoes
    • extra-virgin olive oil
    • pure maple syrup
    • ground cinnamon, salt, black pepper

    Instructions

    Here's how to roast sweet potatoes in the oven with maple syrup and cinnamon:

    1. Preheat your oven to 400 degrees F and lightly spray a baking sheet with non-stick cooking spray.
    2. Dice your sweet potatoes into 1-inch cubes, then place them in a large bowl.
    3. Add the olive oil, maple syrup, cinnamon, salt, and pepper, and toss to coat evenly. 
    4. Spread the sweet potato cubes onto the baking sheet in a single layer. 
    5. Roast for 25-30 minutes, flipping the sweet potatoes with a spatula halfway through.

    Tips

    • For easy cleanup line your rimmed baking sheet with parchment paper.
    • Take care to chop the sweet potatoes into evenly-sized pieces so that they cook at the same rate.

    Variations

    You can add other root vegetables to the tray for a veggie medley. Beets, potatoes, carrots, parsnips, and rutabaga all make a great addition to this easy side dish.

    • ¼ cup olive oil
    • ¼ cup maple syrup
    • 1 teaspoon ground cinnamon
    • ¼ teaspoon salt
