With just a few minutes of prep work and about 20 minutes in the oven, you’ll have an easy and delicious side or light meal your whole family will love.

In addition to a liquid measuring cup and dry measuring cups, here is what you will need to make this easy recipe:

    • 9x13 Baking dish - this is my favorite glass dish because it has a cover that fits perfectly. It goes from the oven to the dinner table, to the fridge, or dishwasher.
    • Large Mixing Bowl - this set of mixing bowls is inexpensive, and they're dishwasher and microwave safe.

    💭 Frequently Asked Questions

Here are some questions (and answers!) readers often ask about this recipe.

    Is broccoli good for you?

Broccoli is a good source of vitamins B, C, and K as well as iron, potassium, and fiber. It's also low in digestible carbs (total carbs minus fiber). Broccoli is good for heart health, too.

What types of cheese melt best?

Colby, Monterey Jack, provolone, swiss, fontina, and gouda are all great cheeses for melting. You can substitute some or all of the cheddar for any one of these cheeses.

Even picky eaters will love the cheesy goodness of this easy broccoli cheese casserole!

    ⭐ Tips

    • Excess water will make the casserole soggy so be sure to drain the broccoli well.

    🍲 Storage

To Store: Leftover Low Carb Broccoli Casserole can be stored in an airtight container for 4-5 days in the fridge. (These are my favorite airtight containers.)

To Reheat: Microwave individual portions in 30-second intervals until heated throughout.

    📖 Variations

The first time you try any new recipe we recommend that you make it just as it is written on the recipe card since that is how the recipe has been tested. However, the next time you make our recipe, you might want to try one of these ideas:

    • If you prefer, use mozzarella cheese instead of cheddar.
    • If you're not a fan of ranch dressing, substitute heavy cream or heavy whipping cream instead. You'll want to add additional seasoning as well such as garlic powder and onion powder. Creamy Italian dressing is also a good substitute for the ranch.
    • Garnish with chopped green onions, if desired, for some freshness.
    • This recipe can also be made with fresh cauliflower.
    • For a little heat, add a pinch of red pepper flakes.

If you're not worried about carbs, check out these ideas:

For a little texture, make a quick mixture of panko breadcrumbs or crushed ritz crackers and grated parmesan cheese (¼ cup each) seasoned with garlic powder. Mix with 1 tablespoon melted butter, and drizzle over the top of the casserole before baking.

My brother-in-law adds crushed pork rinds to the top when he makes it.
