Hi guys - it's Deb stopping by again from Bowl Me Over. Today, I wanted to share with you my newest, easiest recipe: Meatloaf made in the Instant Pot!
Maybe I need to back up a bit.... do you have an Instant Pot? If not and you enjoy quick and easy meals I would tell you that a pressure cooker is a MUST!

No Instant Pot? No problem! Try this tasty and easy meatloaf recipe with smashed potatoes from my friend Rita at Harbour Breeze Home.
Instructions
This is a brief overview of the meatloaf ingredients. Please scroll down to the teal box below for the full printable recipe card with amounts and step-by-step instructions.
- Ground Beef: I like lean ground beef. You can also use ground turkey or chicken.
- Italian Sausage: While this isn't often found in a classic meatloaf recipe, the sausage adds tons of great flavor.
- Bread Crumbs and Parmesan Cheese: Most meatloaf recipes call for only breadcrumbs, but I like the combination of grated parmesan and breadcrumbs (similar to the mixture Ang's husband uses for Italian meatballs).
- Onion: I like to use a yellow onion in this recipe. White onions or sweet onions also work.
- Garlic: Fresh garlic adds a bold flavor, but garlic powder can be substituted if needed.
You'll also need eggs, ketchup, mustard, brown sugar, Worcestershire sauce, salt, black pepper, a can of Rotel diced tomatoes and green chilies, and tomato juice.
Since a loaf pan won't fit into an Instant Pot, we'll use an aluminum foil loaf pan to help the meatloaf hold it's shape while cooking.

Instant Pot Meatloaf

Ingredients
- 1 lb. ground beef
- ¼ lb. Italian sausage mild or spicy, use your favorite!
- ⅔ cup bread crumbs
- ½ cup parmesan cheese
- ½ yellow onion peeled and diced
- 2 eggs
- 1 cup rotel diced tomatoes and green chilies
- 1 tablespoons parsley minced
- 1 teaspoon Worcestershire sauce
- 1 clove garlic minced
- ½ teaspoon salt
- ¼ teaspoon pepper
- Topping
- ¼ cup ketchup
- 2 tablespoons yellow mustard
- 3 tablespoons brown sugar I like a sweet sauce topping my meatloaf. If you like it not so sweet, reduce to 2 tablespoons
- heavy duty tinfoil or a small aluminum pan
Instructions
- Grate the cheese, dice the onion and mince the garlic, add to a large bowl.½ cup parmesan cheese, ½ yellow onion, 1 clove garlic
- Add the remaining ingredients and mix together well but do not over-mix.1 lb. ground beef, ¼ lb. Italian sausage, ⅔ cup bread crumbs, 2 eggs, 1 cup rotel diced tomatoes and green chilies, 1 tablespoons parsley, 1 teaspoon Worcestershire sauce, ½ teaspoon salt, ¼ teaspoon pepper
- Form a small pan with tinfoil (or use a small aluminum pan). Fashion a pan and shape the meatloaf into pan.
- Add two cups of water to the bottom of the Instant Pot.
- Place the trivet in the bottom.
- Place the pan on top. Add the lid and seal. Set timer for 45 minutes. Quick release at the end.
- Prepare the sauce. After the meatloaf has completed cooking in the Instant Pot, slather the top with the sauce. Place under the broiler for 3-5 minutes or until it's toasted. Enjoy!¼ cup ketchup, 2 tablespoons yellow mustard, 3 tablespoons brown sugar
