These colorful pinwheels are great for get together as an appetizer. I love sending them in my daughter's lunch box, or having them for a quick afternoon snack. This is an awesome way to get your family to eat a little healthier.
Veggie pinwheels can be made a day ahead and will keep in the fridge for a couple of days. This recipe is an easy win for everyone in the family!

- purple cabbage
- bell peppers
- carrots
- store-bought or homemade hummus
- garden spinach herb wraps, or similar large soft tortillas
Recipe Variations: You can use a variety of fresh produce in these hummus pinwheels including thinly sliced cucumbers, spinach leaves or other greens, avocado, tomatoes, red onion, etc.
If you've got leftover roasted or grilled vegetables, you can use those for making rainbow pinwheels, too.
I like to use homemade garlic hummus when I have it on hand, but you can use any sort of hummus. These healthy pinwheels are great with roasted red pepper hummus or black bean hummus. (They're also great with ranch dip or cream cheese.)
🔪 Instructions
- Spread the hummus on the wrap.
- Top with veggies.
- Roll tightly.
- Chill for 2 hours.
- Slice with a sharp knife.
How to Make Carrot Ribbons: Use a sharp vegetable peeler to shave off thin 'ribbons' of carrot.

✔️ To make a day ahead, roll each of the filled tortillas up and wrap each one in plastic wrap. Refrigerate until ready to slice and serve.
