    Herb Roasted Carrots are an easy bake-in-the-oven recipe tossed in butter and garlic. This recipe creates the best roasted carrots using easy-to-find ingredients and is ready in less than 30 minutes.

    Oven-roasted carrots are naturally sweet on their own, and this Herb Roasted Carrots recipe brings out their natural sweetness and elevates their flavor using herbs and spices.

    After baking, you have an easy side dish recipe that requires little prep work and can easily serve a crowd if necessary.

    These roasted carrots are perfect for a weeknight meal, roast chicken Sunday supper, or a special occasion.

    🧂 Ingredients

    There are only a handful of simple ingredients for this healthy side dish:

    • raw carrots
    • butter
    • garlic cloves
    • salt
    • fresh ground pepper
    • fresh parsley, thyme, or rosemary for garnish (optional)

    🔪 Instructions

    1. Preheat oven to 425 F.
    2. Grease a rimmed baking sheet with cooking spray and set aside.
    3. Cut up the carrots.
    4. Toss the carrots with butter and garlic.
    5. Season with salt and pepper.
    6. Transfer carrots to the prepared baking sheet, placing them in one single layer.
    7. Roast carrots for 22 to 25 minutes or until they are browned and tender.
    8. Remove from the oven and transfer to a serving plate.
    9. Taste for seasonings and adjust accordingly.
    10. Garnish with fresh chopped parsley.

    ✔️ When you are oven roasting root vegetables, it is important to cut all the pieces about the same size to ensure that they cook evenly.

    🍲 Storage

    To Store: Leftover carrots can be stored in the fridge for 4-5 days in an airtight container. (These are my favorite airtight containers.)

    To Reheat: Microwave individual portions in 30 second intervals until heated throughout.

    📖 Variations

    The first time you try any new recipe we recommend that you make it just as it is written on the recipe card since that is how the recipe has been tested. However, the next time you make our recipe, you might want to try one of these ideas:

    This recipe can be made with any fresh carrots including regular orange carrots, rainbow carrots, or even baby carrots.

    For some sweetness, add a drizzle of honey or a little bit of brown sugar on top of the carrots before cooking.

    If you don't have fresh herbs on hand, consider adding one of these seasoning mixes with dried herbs to your roasted carrots:

    🍴 Serving Suggestions

    For a lemon herb flavor, toss the tender carrots with 1 teaspoon of lemon juice and some fresh thyme.

    The addition of fresh rosemary or fresh sage makes the perfect side dish for Thanksgiving dinner.

    You can also drizzle the cooked carrots with a bit of balsamic vinegar, a pat of cowboy butter, or cowboy butter dipping sauce.
