    Delicious zucchini noodles make a great side dish alternative to pasta. This super easy recipe is full of garlicky parmesan flavor and only takes 10 minutes!

    I love making zucchini pasta because it's got fewer calories than pasta, and it's gluten-free. It's a great way to accommodate guests who are on a low-carb or keto diet, too.

    Fresh zucchini noodles using a handheld spiralizer or countertop spiralizer takes more time than I have on busy weeknights, which is why I really like grabbing these frozen ones from the grocery store.

    Ingredients

    You only need a few simple ingredients for this easy recipe:

    • frozen zucchini noodles
    • olive oil
    • fresh garlic
    • fresh parmesan cheese
    • kosher salt and black pepper

    Ang's Recipe Tips

    • Frozen zucchini noodles can hold a lot of water. The best way to cook them in in a skillet, and then to drain them. Gently pat them dry with a paper towel to get rid of any excess moisture.
    • To serve your noodles as a cold salad, dip them into an ice bath quickly to stop the cooking.

    Storage

    To Store: Store leftovers in the fridge for 3-5 days in an airtight container. (These are my favorite airtight containers.)

    To Reheat: Microwave individual portions in 30 second intervals until heated throughout.

    Variations

    The first time you try any new recipe we recommend that you make it just as it is written on the recipe card since that is how the recipe has been tested. However, the next time you make our recipe, you might want to try one of these ideas:

    • for a little kick, add a pinch or two of red pepper flakes or a dash of hot sauce
    • sprinkle a little bit of Italian seasoning mix for even more flavor
    • swap out the parmesan for fontina, gruyere, or gouda cheese
    • add fresh herbs like basil, parsley, thyme, mint, chives, or rosemary

    You can also make this easy recipe with other spiral veggies. In addition to zucchini spirals, I have seen spiral butternut squash, beet, carrot, and spaghetti squash in the freezer section at the store.

    Serving Suggestions

    The best part about zucchini noodles is that they're so versatile! You can have them as a main dish, part of a salad, or as a side dish with grilled chicken and garlic butter shrimp. Because zucchini has a mild flavor, it's easy to add it to all sorts of delicious recipes.

    These zucchini noodles are delicious just like this, but you can also top them with tomato sauce or basil pesto and our keto chicken meatballs or cheesy meatball casserole for a more hearty meal.

    I love adding sweet and sour meatballs over zucchini noodles for a healthy meal.

    How much zucchini is a serving?

    One serving is equal to 2 cups of zucchini noodles.

    Why are my zucchini noodles soggy?

    Zucchini naturally has a high water content. To avoid a soggy mess, I recommend draining the cooked noodles and patting them dry with a paper towel.
    If you are using fresh zucchini noodles, you can also use an absorbent towel and wring some of the moisture out before cooking. However, it's too easy to end up with lots of broken noodles if you try that with frozen zucchini.

    Are zucchini noodles better than pasta?

    1 cup of pasta contains about 14 grams of carbs, while 1 cup of raw zucchini contains around 3.6 grams.
    Zucchini has far less calories than pasta also. About one cup of zoodles is around 35 calories, while spaghetti has about 210 calories per cup.

    Ingredients

    • 1 12-ounce package frozen spiralized zucchini
    • 2 tablespoons olive oil
    • 2 cloves fresh garlic
    • 2 tablespoons fresh parmesan
    • kosher salt and black pepper, to taste

    Instructions

    • Add the zucchini noodles into a non-stick skillet with a lid over medium-high heat.
      1 12-ounce package frozen spiralized zucchini
    • Cook for about 5 minutes, stirring occasionally until the noodles are tender, drain and set aside. Gently pat the noodles dry to get rid of any excess water.
    • Reduce the heat to medium. Add the olive oil to the skillet cook the garlic for 1-2 minutes until just golden brown. (Do not overcook.)
      2 tablespoons olive oil, 2 cloves fresh garlic
    • Return the noodles to the skillet. Toss with the garlic and olive oil mixture to coat.
    • Season with salt and pepper as desired, and serve with parmesan cheese on top.
      2 tablespoons fresh parmesan, kosher salt and black pepper, to taste
