In our house, it's all about convenience.  With long work days and hectic kid schedules, I don't usually have time to make elaborate dinners during the week. That's why I love meal prepping and make ahead dinners. Our Pork Lettuce Wraps recipe starts with our Classic Slow Cooker Pulled Pork. I pop it in my slow cooker on Saturday or Sunday and let it go.

This versatile recipe uses boneless pork shoulder, but you can use any cut of pork that is suited to slow cooking. It is just perfect for make ahead meals.  There are lots of ways to use this pulled pork, but today, I'm showing you how to make Pork Lettuce Wraps.

You just need a few ingredients from the pantry and a handful of fresh items, and you're ready to assemble dinner. Really, this isn't so much a recipe as it is directions for assembly! No matter what you call it, it's totally delicious, and your whole family will love it!

My Healthy Sesame Chicken recipe is also quick and easy when you need to get dinner on the table fast!

Make Ahead Slow Cooker Pulled Pork in a blue bowl, surrounded by onions, garlic and seasonings.
Lettuce wraps can be made with lean ground pork or ground chicken, but my favorite is leftover pulled pork!

    Ingredients

This is meant to be a brief overview of the lettuce wrap recipe. For step-by-step instructions and a full printable recipe card with ingredients, please scroll down to the teal box below.

    • Pulled Pork: Both store-bought or homemade pulled pork will work in this recipe.
    • Lettuce: Look for Boston lettuce, bibb lettuce, or butter lettuce which have a nice cup-like shape.
    • Dressing: To make the dressing, you will need vegetable oil, red pepper flakes, soy sauce, brown sugar, fresh lime juice, fresh ginger, and fresh garlic
    • Toppings: You can add any toppings you like. My favorites are cashews or peanuts, diced bell peppers, shredded purple cabbage, and shredded carrots.

    Variations:

Here are some ways to make this recipe your own:

    • Add a splash of sriracha for a kick of heat.
    • Top with a sprinkle of sesame seeds.
    • Add ½ teaspoon of cumin for a hint of smokiness.
    • For more great flavor, add pickled vegetables, red onion, Asian Purple Cabbage Slaw, or even a little bit of green onions for a garnish.
    • Instead of pulled pork, try these with our Pulled Chicken Recipe. You could also make these lettuce cups with leftover honey garlic chicken.

    Serving Suggestions

The meat can be served warm or cold in these pork lettuce cups.  If you wish to heat it, just zap it in the microwave until warm BEFORE tossing it with the soy sauce mixture.

You can add additional toppings like diced red chili peppers, water chestnuts, a dash of chili sauce, or baby corn.

I love cooking pork for quick and delicious family meals like this one-pan Oven Roasted Pork Tenderloin Recipe and Easy Instant Pot Pork Tenderloin Dinner. Here are a few other recipes I know you're going to want to try:

    • Asian Pork Kabobs - when it's time to grill, this is one of my favorite dishes. With hoisin sauce, chili paste, and ginger, it's an amazing combination of flavors.
    • Baked Eggrolls with Pork and Veggies - totally scrumptious and worth the effort. Served as an appetizer or alongside a big bowl of noodles, these are always a big hit.

Zucchini boats with pulled pork or pulled pork mac and cheese are also a great way to use up leftover pulled pork.

    • Spoon drizzling glaze over Sheet Pan Pork Tenderloin.
    • Dutch Oven Roasted Pork Tenderloin on a plate with fresh thyme.

I made these for dinner and they were a HUGE hit with my picky boys (I left off the red peppers for one, and the other had them without the cashews). We'll definitely be making these again!
