This quick recipe can be made on the stovetop in about 25 minutes. You don't even need to cut the mushrooms—once they're cleaned, you're ready to cook.
Ingredients
Here's what you'll need to make this easy recipe.
- Mushrooms: I like using white button mushrooms because they're inexpensive, mild, and absorb flavors well. Be sure to gently clean your mushrooms with a damp paper towel before using. Look for mushrooms without brown spots that appear firm and smooth. Portobello, shiitake, or cremini mushrooms are also delicious in this recipe.
- Cowboy Butter: This garlic butter makes the mushrooms incredibly flavorful. You can also just melt unsalted butter in the skillet, add the other ingredients for the butter and the mushrooms, and cook as directed.
- Ground Mustard: A little bit tangy, ground mustard adds a bit of earthiness to the dish. If you really enjoy Dijon mustard, you can add one tablespoon to the mushrooms while they're cooking.
- Worcestershire Sauce: Adds a little acidity, umami, and also sweetness which complements the mushrooms.
- Paprika: This adds a bit of complexity to the flavors and perfectly complements the other ingredients. For a smokier flavor, use smoked paprika.
- Lemon Zest: The brightness of the lemon zest cuts through the earthiness of the mushrooms with a little zing and makes the dish pop. Add this just before serving for best results.
- Salt and Pepper: I use kosher salt and freshly cracked black pepper to enhance all the ingredients. Add a pinch of red pepper flakes for a little extra heat to taste.
Optional: Garnish with chopped fresh parsley or fresh chives for a bright flavor and pretty color.

Storage
To Store: Leftover Cowboy Mushrooms should be stored in an airtight container in the refrigerator.

Instructions
- Melt the cowboy butter in a large skillet over medium heat.1 cup Cowboy Butter
