If you love chicken tacos, then this easy chicken taco casserole recipe is for you! My family loves everything remotely related to tacos like taco stuffed peppers and walking taco casserole.
It's one of my favorite recipes to make because it's quick and easy - and totally delicious of course!
Because we're using tortilla chips instead of flour tortillas, this recipe is also low carb so it's a great option that the entire family can enjoy together.

Here are the simple ingredients you'll need:
- Cream Soup: Use either store-bought cream of chicken soup or homemade cream soup substitute.
- Sour Cream: Adds creaminess and tang to the recipe. For a lower calorie substitute, use plain Greek yogurt.
- Diced Tomatoes with Green Chiles: This is a quick way to add lots of flavor to your casserole. I like to use mild Ro-tel, but you can experiment with other versions depending on how spicy you like your food. You could also use salsa if you prefer.
- Black Beans: Be sure to drain and thoroughly rinse your canned black beans. Swap out the can of black beans for pinto beans or kidney beans.
- Seasoning: Either store-bought or taco seasoning mix will work for this dish.
- Chicken: I swear by using crockpot shredded chicken or rotisserie chicken for fast meals. This recipe can also be made with ground chicken or chopped chicken breasts.
- Tortilla Chips: I like to use regular corn tortilla chips, but you could also use corn chips like Fritos or even Doritos if you want.
- Cheese: The sharp flavor of cheddar cheese is perfect in this dish. However, you can use any good melting cheese like Monterey Jack or a Mexican cheese blend. Whenever possible, I recommend grating your own cheese rather than buying pre-shredded as it melts better.
Variations:
Add veggies like diced bell pepper, chopped onions, corn kernels, or sliced jalapeno peppers.

Ang's Recipe Tips
For freshness, garnish the dish with chopped fresh parsley or cilantro.
Thicker chips will hold up to the moisture of the chicken filling better than thin ones.
This recipe can be made in a baking dish or a 12-inch cast iron skillet.

Using crockpot shredded chicken is an easy way to save time. I like to make a batch of this at the beginning of the week to use in tacos, salads, and casserole recipes. It's a great way to meal prep for the week.
You can also use a rotisserie chicken from the grocery store.
Storage
To Store: Leftover Chicken Taco Casserole should be stored in an airtight container in the fridge. This casserole is best eaten immediately because of the crunchy chips on top. However, lefts will last in the fridge for 3-4 days.
(These are my favorite airtight containers.)
To Reheat: Microwave individual portions in 30-second intervals until heated throughout.
Because of the chips in this recipe, I do not recommend freezing this casserole.
Serving Suggestions
I serve this chicken taco bake with my family's favorite taco toppings like guacamole or sliced avocado and fresh salsa or pico de gallo.
It's delicious with a little bit of pickled red onion, sliced black olives, or chopped green onions on top, too.

- 2 10.5oz can of cream soup, or 2 cups homemade Cream Soup Substitute
- 1½ cups sour cream
- 1 14oz can diced tomatoes with green chilis - such as Ro-tel
- 1 15oz can black beans rinsed and drained
- 2 tablespoons store-bought or homemade taco seasoning
- 4 cups shredded chicken
- 1 13oz bag tortilla chips crushed and divided
- 2 cups shredded cheddar cheese divided
Instructions
- Preheat the oven to 350F.
- Grease a 9x13 baking dish. Set aside.
- In a large bowl, combine the cream soup, sour cream, diced tomatoes and chilies, black beans, taco seasoning, and chicken.2 10.5oz can of cream soup, or 2 cups homemade Cream Soup Substitute, 1½ cups sour cream, 1 14oz can diced tomatoes with green chilis - such as Ro-tel, 1 15oz can black beans, 2 tablespoons store-bought or homemade taco seasoning, 4 cups shredded chicken
- In the bottom of the prepared baking dish, add about a third of the crushed chips to the bottom of the pan.1 13oz bag tortilla chips
- Spoon half the chicken mixture over the top of the chips and add a layer of cheese.2 cups shredded cheddar cheese
- Add another layer of chips and the remaining chicken mixture.1 13oz bag tortilla chips

- Bake for 30 minutes at until hot and bubbly. Serve immediately.
