    Chicken Bites with Peanut Sauce via Juggling Act Mama

    I want to share with you one of my all-time favorite recipes.  Chicken Bites with Peanut Sauce are so good to snack on - it's a tad more refined than say wings, but just as tasty.  My sister Alyssa also makes these frequently, though her recipe varies a tad.  I know what you're thinking - chicken and peanut butter?  YES! Chicken and peanut butter - think of it like a version of chicken satay, only bite-sized.

    The sauce is the perfect balance of flavors with the tang from the barbeque sauce and Dijon mustard and the creaminess of the peanut butter.  It all goes so well with the chicken.  Your guests are going to LOVE this Chicken Bites with Peanut Sauce appetizer!

    Ingredients

    • ⅓ cup hot water
    • ¼ cup barbeque sauce
    • ¼ cup creamy peanut butter
    • ¼ cup soy sauce
    • 2 tablespoons dijon mustard
    • 1 lb chicken breasts cut into bite size pieces

    Instructions

    • Microwave the peanut butter for 45-seconds in a medium bowl.
    • Whisk in the hot water, barbeque sauce, soy sauce and dijon mustard. Place half sauce into a bowl in the refrigerator (this will be for dipping later.)
    • Add the chicken to the remaining sauce and toss to coat. Marinate in the refrigerator 1 hour.
    • Heat a skillet over medium high heat and add a tablespoon of olive oil. Cook the chicken , stirring often.
    • Warm the reserved sauce in the microwave about 1 minute. Serve alongside the chicken.

    If you have a peanut allergy, you could substitute the peanut butter.  I've never tried making this with soy nut butter, but I think it would still work out alright.

      On the chicken bites w peanut sauce recipe. .. at what point do I use the hot water?

        Whoops! Sorry about that - I've corrected the recipe. You want to add the hot water with the other liquids after you have warmed up the peanut butter. Enjoy!
