    Cheddar Bacon Muffins

    Looking for a savory muffin for your next brunch, or side for a hearty stew or chilli? Look no further than these amazing Cheddar Bacon Muffins.  What's not to love - Cheddar? Yum! Bacon? Yum!  Serve them with a little garlic chive compound butter and they are so, so yummy!

    Cheddar Bacon Muffins

    Ingredients:
    1 cup all purpose flour
    ½ cup whole wheat flour
    1 tablespoon baking powder
    ½ tablespoon sugar
    1 cup shredded sharp cheddar cheese
    1 package of bacon (1lb) cooked and crumbled into pieces
    1 cup milk
    1 egg
    ¼ cup applesauce

    Directions:
    Preheat oven to 375-degrees.  You'll definitely want to use muffin liners here because these babies will stick to your pan and there's  nothing to love about that! 

    Stir together the dry ingredients and mix in the cheese and bacon.  I used Kraft's Triple Cheddar Blend - Oh gosh, so good - but you could use any cheddar you have.
    Beat egg, milk, and applesauce together then mix in with the dry ingredients until just combined.

     

    So, two things here, it will seem like the mixture is really thick and like there's not enough batter, and, it's OK if there are lumps.  The thing is, there's lots of bits of bacon and cheese, so it's really heavy on the mix-ins, but the proportions are right, and given that fact, there will definitely be lumps.  Just don't over mix the batter and all will be well!

    Spoon into a paper-lined muffin tin and bake for 15-20 minutes. I recommed you let these cool a bit before eating, since the papers won't stick as much.

     

    All your calories for the day miht be in these, but I'm not going to worry about that - heehee!  I hope you'll enjoy these as much as we have.
