    I know what you're thinking.... cookies for breakfast?  Yes!  Cookies for breakfast!!  But these aren't just any cookies, these Blueberry Breakfast Cookie Recipe made with wholesome ingredients will soon be a family favorite!

    This year, I'm working on being fit and active, and eating healthy. That doesn't mean I have to sacrifice taste though. In my house, mornings are challenging.  This mama used to be a morning person, but that was before years of sleep deprivation. I have just as hard a time getting out of bed in the morning as the kids. 

    I want fast, easy and delicious breakfast foods that aren't loaded in sugar or artificial ingredients for my family. I've been intrigued with breakfast cookies for a long time, and today I'm sharing with you a new recipe I think you're going to love.

    What are breakfast cookies?

    Breakfast cookies are usually high in fiber and protein.  Sometimes they have peanut or other nut butters in them to help boost the protein. Most breakfast cookie recipes start with oats and ours is no exception.  Oats have lots of soluble fiber. 
    We also include wheat germ in our recipe because it is high in fiber and protein as well as magnesium and Vitamin E.  A lot of breakfast cookie recipes also have bananas in them, which are high in potassium, Vitamin B6, and Vitamin C.

    Are breakfast cookies good for you?

    Blueberry Breakfast Cookies are loaded with tons of good-for-you and great-tasting ingredients including fresh blueberries and honey.
    These cookies could be considered brain food with all the B vitamins and folate - great for pregnant and nursing mamas! Plus the oats and blueberries are great heart-healthy foods, too! Some walnuts for crunch and, of course, omega-3.

    🔪Instructions

    This is meant to be a brief overview of the blueberry oatmeal cookies recipe. For step-by-step instructions and a full printable recipe card with ingredients, please scroll down to the teal box below or Jump to Recipe.

    1. Preheat the oven to 325-degrees F. Line a baking sheet with parchment paper or a silicon mat.
    2. Combine the egg, mashed banana, milk, vanilla extract, honey, and coconut oil in the bowl of an electric mixer fitted with a whisk attachment. Beat until combined.
    3. In a large mixing bowl, combine the quick-cooking oats, all-purpose flour, baking powder, cinnamon, wheat germ and brown sugar and gently whisk to combine.
    4. Add the dry mixture to the mixer a little at a time on the lowest speed. Remove from the mixer and scrape down the edges.
    5. Fold in the chocolate chips, walnuts and blueberries until just combined. This is a wet batter, so don't be surprised if it looks very loose.
    6. Scoop the cookie mixture onto the prepared baking tray. I like using a cookie scoop.
    7. Bake for 10-15 minutes until the edges are golden brown. Let set for 10 minutes on the tray before removing to a wire rack to cool completely.

    ⏲️ Storage

    Store in an airtight container or bag for up to 1 week.  (These are my favorite airtight containers.)

    • Omit the blueberries and use raspberries.

    The first morning I set these on the table, my six-year-old looked at me out of the corner of her eye and scowled.

    "Is this a trick?" she asked.  She loves sweets as much as her mama and is always angling for a treat.

    "They're good for you," I told her.

    Even more skepticism from her nine-year-old brother who declared they looked messy.

    Well yes, they are a tad messy when they're still warm.  The sweet blueberries can burst in the oven.  You can use dried blueberries if you prefer.

    Olivia picked one up and nibbled the edge.  "Ethan, they taste like REAL cookies!" she exclaimed.
