Baked oatmeal is loaded with wholesome ingredients that are the perfect way to start your day! One of my favorite parts about baked oatmeal is how easy it is to customize! You can add your favorite fruits or berries, and the touch of maple syrup on top is the perfect way to add a little natural sweetness.
Unlike the gooey texture of traditional oatmeal, this yummy baked oatmeal is more like the texture of a casserole.
Baked oatmeal is a great hot breakfast option for busy mornings, and you can even make a big batch ahead of time to enjoy all week long!

Recipe Variations
One of the best things about this recipe is how easy it is to customize it to your favorite flavors! Here are some fun ideas:
- Add a handful of chopped walnuts or pecans for an added crunch.
- If you want the oatmeal to be sweeter just add ¼ cup applesauce or mashed banana to the mix.
- Coconut milk, almond milk, oat milk, and other non-dairy milk will all work in this recipe instead of whole milk.
- Any sort of berries will work, and this is also delicious with bananas, apples, or peaches.

Storage
To Store: Keep leftovers in an airtight container in the fridge for 3-5 days. (These are my favorite airtight containers.)
I like to have individual portions of the oatmeal bake in the fridge so they're easy to grab the next day and throughout the week.
To Reheat: Microwave in 30-second intervals until heated through.

- 1 ½ cups milk
- 2 eggs
- ½ cup pure maple syrup OR brown sugar
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- 2 ½ cups rolled oats
- 1 teaspoon baking powder
- 1 cup fresh berries
Instructions
- In a bowl beat the milk and eggs until incorporated.1 ½ cups milk, 2 eggs
- Pour the maple syrup, vanilla extract, and cinnamon and whisk to incorporate.½ cup pure maple syrup OR brown sugar, 1 teaspoon vanilla extract, ½ teaspoon cinnamon
- Add the oats and baking powder and continue mixing until everything is well incorporated.2 ½ cups rolled oats, 1 teaspoon baking powder
- Transfer the mixture to a buttered casserole dish (9x13) and top with fresh fruit if desired.1 cup fresh berries
- Let the batter rest for around 30 minutes.
- Preheat the oven to 350 degrees. Lightly flour a baking pan.
- Bake for 45 minutes or until done.
- Let it cool for 10 minutes before slicing.

I used mashed 2 ripe bananas and 1/4 c apples sauce as suggested it, with oats milk.

Yes, I'm using baking pan and casserole dish interchangeably here. Any 9x13 pan, glass or aluminum, will work 🙂
