If you're looking for a quick weeknight meal or an easy game-day snack - I've got you. I love cooking one protein and turning it into several meals, and that's exactly what we're doing with our crockpot BBQ chicken. (Plus you can pop extras into the freezer for later.)
This tender chicken with tangy barbecue sauce is super versatile, and great to have on hand for making all sorts of delicious dishes.
Today, I'm going to show you how to turn it into irresistible sliders with sharp cheddar cheese and crunchy dill pickles.
Ingredients
This is meant to be a brief overview of our great recipe. For step-by-step instructions and a full printable recipe card with ingredients, please scroll down to the teal box below.
- BBQ Chicken: I highly recommend doubling our recipe for making BBQ chicken in the slow cooker. However, if you're short on time, grab a rotisserie chicken and toss the shredded chicken with your favorite barbecue sauce.
- Slider Buns: I like soft white slider rolls. Potato rolls or Sweet Hawaiian rolls work great in this recipe.
- Cheddar Cheese: Because it melts better, I suggest using freshly grated cheddar cheese; however, you can use pre-shredded cheese if that's easier for you.
- Dill Pickles: A balance of vinegar and dill gives these pickles a bold flavor that complements the BBQ chicken.
- Butter: Melted butter brushed on top of the rolls adds delicious flavor and a little bit of browning.
- Garlic Powder: This is the finishing touch for the sandwich - don't skip it!
Optional: Add a little bit of smoked paprika, black pepper, and/or kosher salt to the melted butter and garlic. You may also want to add a tiny bit of extra BBQ sauce when assembling.

Storage
To Store: Leftover sandwiches can be stored in an airtight container in the refrigerator for 3-4 days. However, they are best when eaten immediately. (These are my favorite airtight containers.)
To Reheat: Microwave individual portions in 30 second intervals until heated throughout.

Crispy smashed potatoes or cheesy tater tots make perfect side dishes whether these sliders are for a meal or a snack.
Pickled slices of red onion are also a great addition to these sandwiches.
