These cheesy nachos can be made with pretty much any kind of French fries, but I especially love them with crispy waffle fries.

These cheesy fries are great for a quick snack or game day with your family and friends. You can add many different types of toppings, including avocado, peppers, olives, and green onions. Put on anything you like!

Usually, nachos are made with tortilla chips and cheesy sauce, but these loaded nachos start with waffle fries. They're piled high with seasoned ground beef and loads of delicious toppings.

    🧂 Ingredients

This is meant to be a brief overview of this great recipe. For step-by-step instructions and a full printable recipe card with ingredients, please scroll down to the teal box below.

Making Waffle Fry Nachos is super easy, here's what you'll need:

    • waffle fries (frozen or homemade)
    • cooked taco meat
    • red onion
    • shredded cheese (such as cheddar or mozzarella)
    • roma tomatoes
    • black olives
    • sliced jalapenos
    • chopped fresh cilantro (optional)
    • diced avocado
    • store-bought or homemade taco seasoning

    🔪 Instructions

You can make these flavorful nachos in different ways, either an oven safe skillet, or sheet pan. We'll show you how!

    1. Bake waffle fries according to the package directions on a sheet pan.
    2. Transfer the fries to a cast iron skillet.
    3. Add shredded cheese and cooked taco meat on top of the fries.
    4. Return to the oven and cook until the cheese is melted.
    5. Remove from the oven and add desired toppings.

These nachos can be made on a sheet pan also following the same steps:

    1. Bake the fries in a single layer on a sheet pan covered in aluminum foil.
    2. Add the cheese and ground beef and bake.
    3. Remove from the oven and add toppings.

    ⭐ Tips

    • For extra crispy waffle fries, use your air fryer to cook the fries initially. However, I recommend baking them once topped with meat and cheese.
    • Use slow cooker taco beef to save time.

    🍲 Storage

To Store: Leftover waffle fry nachos should be stored in an airtight container in the fridge. (These are my favorite airtight containers.) However, these are really best eaten immediately.

To Reheat: Microwave individual portions in 30 second intervals until heated throughout.

    📖 Variations

The first time you try any new recipe we recommend that you make it just as it is written on the recipe card since that is how the recipe has been tested. However, the next time you make our recipe, you might want to try one of these ideas:

There are tons of different cheeses that are delicious with waffle nacho fries. Try them with Monterey Jack, Colby-Jack, or pepper jack. You can also use a combination of cheeses if you like.

Instead of beef, use shredded chicken or pulled pork, or skip the meat altogether for vegetarian nachos.

For spicy loaded waffle fries, add slices of jalapeno peppers.

You can use other types of fries, sweet potato waffle fries, or even tater tots instead of waffle fries.

    🍴 Serving Suggestions

Serve with additional toppings like homemade guacamole, green onions, pico de gallo, crumbled bacon, or anything else you love when you make traditional nachos.

Add a dollop of sour cream or Greek yogurt (optional) if you like, or creamy ranch dressing. These yummy waffle fry nachos are also delicious with this cream cheese salsa dip.
