    • butter, onion, and green peppers - I like sweet onions but a yellow onion work in this recipe just as well
    • milk and flour - to make a roux as the base for the cheesy sauce
    • cheddar and mozzarella cheeses - shredded
    • frozen tater tots - uncooked
    • ham - cooked
    • garlic powder, black pepper, kosher salt, dried thyme for seasoning

    1. Cook the onions and peppers in butter.
    2. Make the roux.
    3. Add the cheese and seasonings.
    4. Assemble the casserole.
    5. Bake for 45 minutes at 375F.

    🍲 Storage

    To Store: Leftovers should be transferred to an airtight container (once cooled to room temperature) and stored in the refrigerator. (These are my favorite airtight containers.)

    To Reheat: Microwave individual portions in 30 second intervals until heated throughout.

    There are lots of ways to personalize this easy casserole. For example, add a dash of hot sauce, or swap out the seasonings for the same amount of ranch seasoning mix.

    Mix in a cup of chopped broccoli florets (fresh or frozen) or for a little extra richness, add a tablespoon or two of sour cream to the cheesy sauce.

    I love using cheddar and mozzarella in this recipe, but you could also use gouda, swiss, or gruyere.

      Ingredients

      • 1 32 ounce package frozen tater tots
      • 4 cups cooked ham diced
      • 2 cups shredded cheddar cheese divided
      • 1 cup shredded mozzarella cheese
      • 1 onion finely chopped
      • 1 green bell pepper diced
      • ½ cup milk
      • ¼ cup all-purpose flour
      • 2 tablespoons unsalted butter
      • 1 teaspoon garlic powder
      • ½ teaspoon black pepper
      • ½ teaspoon dried thyme
      • ¼ teaspoon salt

      Instructions

      • Preheat the oven to 375°F and grease a 9x13-inch baking dish.
      • In a large skillet, melt butter over medium heat. Add chopped onion and green bell pepper, sautéing until softened.

      • Sprinkle flour over the vegetables, stirring constantly for 1-2 minutes to create a roux.
        ¼ cup all-purpose flour
      • Gradually whisk in milk, ensuring a smooth consistency. Cook until the mixture thickens.
        ½ cup milk
      • Stir in 1 cup of cheddar cheese and the mozzarella cheese until melted, creating a velvety cheese sauce.
        2 cups shredded cheddar cheese, 1 cup shredded mozzarella cheese
      • Season with garlic powder, black pepper, dried thyme, and salt. Mix well. Taste and adjust seasonings as desired.

      • In the prepared baking dish, layer half of the tater tots, followed by diced ham. Pour the cheese sauce evenly over the layers. Top the casserole with the remaining tater tots.

      • Bake in the preheated oven for 30-35 minutes. Remove from the oven and top with the remaining cheese. Bake for an additional 10 minutes or until the casserole is bubbly, and the tater tots are golden brown.
      • Allow the casserole to cool for a few minutes before serving.
