    Mr. Juggling Act loves hot wings.  I do not, and since I do most of the cooking, we rarely have wings.  Except for game day - that's when I break out all my "man-food" recipes.  All the spicy, messy, stuff he loves to eat, including these Spicy Hot Wings.

    Unlike traditional hot wings, these are baked.  Yep, so they're a bit healthier than the deep-fried version - though there's just as much butter!! 

    Plus, since you don't have to stand over the stove, these make a great dish for parties - just prep them ahead of time and stick them in the oven just before it's time to serve - super easy!

    Ingredients

    • chicken wings - plan on ½ pound of wings per person if you're having a party or get together.
    • unsalted butter - using unsalted allows you to control the amount of salt in the recipe.
    • hot sauce - we use Frank's Red Hot.
    • salt - I always have Kosher and Himalayan salt on hand. Using Himalayan will give you the slightest hint of smokiness.
    • chives - chopped finely for garnish.
    • Blue Cheese Dressing - This is a must for serving with spicy hot wings!

    Instructions

    1. Rinse the wings under cold running water, then drain and pat dry completely with paper towels.
    2. Melt the butter in a small saucepan over medium-low heat. Once melted, remove from heat and whisk in the hot sauce and salt.
    3. Cover the bowl and marinate on the counter for 20 to 30 minutes, or in the refrigerator for up to 24 hours.
    4. Preheat the broiler.
    5. Cover a large baking sheet with tinfoil, then set a wire cooling rack on top.
    6. Spread the wings out on the cooling rack (this will allow them to cook evenly underneath and not stick.
    7. Discard the remaining sauce.
    8. Broil about 10 minutes, then turn the wings and cook for an additional 10 minutes.
    9. Remove from the oven, garnish with chives and serve with blue cheese dressing.

    Frequently Asked Questions

    What goes good with hot wings?

    Either blue cheese or ranch dressing are both very tasty with these wings.
    Traditionally, celery or carrots may be served with wings also. The crunchy texture compliments the chewy wings and they go well with either dressing also.

    Are wings unhealthy?

    Fried wings are really not very healthy since they contain a lot of saturated fat. However, baking the wings is a great alternative.
    Technically, this recipe has you broiling the wings, which gets the skin nice and crispy without the added fat of frying.

    Should I cover my chicken wings when baking?

    Not all ovens cook the same. If you find that your broiler is running on the hot side, you can cover the wings with aluminum foil for half the cooking time.
