    When my garden is full of beautiful herbs one of my favorite things to make is compound butter. This recipe is for Dill Butter, which goes so well with tender salmon filets and all sorts of fish dishes. I'm also including a variation for making lemon dill compound butter.

    Compound butter is salted or unsalted butter that is creamed with other savory or sweet ingredients such as herbs, honey, or even fruit.

    To Store: Store leftovers in the refrigerator for 1 week.

    To Freeze: Place the dill butter into a resealable freezer bag.

    To Thaw: Allow the butter to thaw in the fridge over night.

    The next time you make it, you might consider one of these different ways of making this great recipe:

    • Lemon Dill Butter - add lemon juice and lemon zest to the butter: the zest and juice of one fresh lemon into the butter mixture with the chopped dill.
    • Garlic Dill Butter - add fresh or roasted garlic: mince 1-2 cloves of garlic and combine with the butter and dill.

    You can also add 1 teaspoon of freshly cracked black pepper if you like.

    🍴 Serving Suggestions

    When you're ready to serve, unroll the herbed butter log and slice into ½-inch thick pieces. Alternatively, use a melon baller to create butter balls.

    This dill flavored butter is totally amazing on seafood (especially salmon fillets!) but also mixed into creamy mashed potatoes, on top of steaks or pasta, and with all kinds of veggies.

      Ingredients

      • 16 ounces unsalted butter (2 sticks)
      • 2 teaspoons chopped fresh dill
      • 1 teaspoon kosher salt

      Instructions

      • In a large bowl, open your packages of butter and let them come up to room temp. DO NOT MICROWAVE!
        16 ounces unsalted butter
      • Once the butter is soft, use a whisk or electric mixer to whip it up until the butter is smooth and creamy.
      • Add the chopped fresh dill and salt into the butter and mix until well combined.
        2 teaspoons chopped fresh dill, 1 teaspoon kosher salt
      • Spread the mixture onto a log-like shape on a piece of parchment paper.
      • Roll the paper and twist the ends.

        Compound butters are so awesome to have on hand, and I love that you added dill to yours. It'll be perfect over fish or veggies or a potato, or heck... maybe I'll just pop it into my mouth and save some time 😉
