    Silver dollar pancakes are so simple to make when you use a silver dollar pancake pan! These delicious pancakes are perfect for breakfast or brunch.

    Breakfast is such a fun meal - especially when it's not rushed. I love baking on the weekends, and Mr. Juggling Act almost always makes pancakes on Sundays. It's a nice way to spend time together at the end of a long week. 

    When the kids were very small, I often made silver dollar pancakes because they were just the right size. You can purchase a silver dollar pancake pan to make them or free-form them... even though the kids are older now, eating tiny food is fun!

    Silver Dollar Pancakes start out with a batter that's pretty much the same as any other pancake recipe. You probably already have all the ingredients on hand!

    🧂 Ingredients

    • flour
    • granulated sugar
    • baking powder
    • milk
    • egg
    • vanilla extract
    • ground cinnamon
    • butter
    • cooking spray

    🔪 Instructions

    Here's how to make silver dollar pancakes:

    1. First, mix together the dry ingredients in a large mixing bowl.
    2. Then, add in the milk, egg, and vanilla extract.
    3. Stir to combine.
    4. Then, add the melted butter until just combined. Take care not to over-mix!
    5. Now, spray the silver dollar pancake pan with cooking spray and set it onto a burner heated to medium-high. (You may need to adjust this if your stove cooks hot).
    6. Next, pour a tablespoon of batter onto the skillet and repeat until each well of the pan is full.
    7. When the bubbles appear on the top of the pancake, flip it using a small spatula.
    8. Cook another minute, then remove from the pan and serve hot.
    9. Respray the skillet and repeat with the remaining batter.

    How Do You Serve Silver Dollar Pancakes?

    Serve with a variety of toppings such as butter, syrup, jam, fresh fruit and even whipped cream.  My daughter loves hers with strawberries and maple syrup while my son like them loaded with mini chocolate chips! Flavored butter and spreads are also delicious. Here are a few recipes you might enjoy:

    Why Are My Pancakes Not Fluffy?

    Over-mixing will cause your silver dollar pancakes chewy instead of fluffy. Stir the dry and wet ingredients until they are just mixed together. There may be some lumps but that's okay. If you over-mix, gluten will develop from the flour and that's what makes them chewy.

    Recipe Variations

    Because we test all our recipes, we recommend that you make them once just as it is without substitutions or changes. Sometimes variations can go awry. Making our silver dollar pancakes as we have tested it will yield the best results. If you really want to get creative, here are some ideas for variations that might work well. (Please note, we have not tested these variations).

    • To the batter, add mini chocolate chips, chopped nuts, or small blueberries.
    • For a pumpkin version, reduce the milk to ⅓ cup and use ⅓ cup of pumpkin puree.
    • Use buttermilk instead of regular milk for buttermilk silver dollar pancakes.

    🍲 Storage

    These little silver-dollar pancakes can make your week a lot easier. Make a double batch on the weekend, then place them in an airtight container between sheets of parchment paper. Refrigerate until ready to serve. I love that my kiddos can grab homemade pancakes from the fridge and warm them in the microwave in the morning. It's a fantastic way to get them to be more responsible for themselves in the morning, too!

    These pancakes are delicious with maple syrup or confectioner's sugar sprinkled on top. It's also amazing with flavored butters like brown sugar butter, maple butter, or cinnamon honey butter.

    • 1 cup all-purpose flour
    • 2 tablespoons granulated sugar
    • 2 teaspoons baking powder
    • ⅔ cup milk
    • 2 egg
