    There's something totally irresistible to me about a Girl Scout Samoa Cookie. I have a serious weakness for shortbread cookies, but when you add chocolate, coconut and caramel, I'm totally sold.

    These Samoa Bar cookies are similar to my Shortbread Magic Bars Recipe, but they are based, of course, on the famous Girl Scout cookie. I think you're going to really love these bars!

    Ingredients

    Here is what you will need for this recipe:

    • salted butter
    • all-purpose flour
    • sugar
    • salt
    • semi-sweet chocolate chips
    • shredded coconut
    • Caramel Candy Bits
    • sweetened condensed milk

    Can you use regular milk instead of sweetened condensed milk?

    No, sweetened condensed milk is much sweeter than regular milk. Evaporated milk cannot be used either. However, you can use coconut milk as a substitute in this Samoa Bars recipe.

    Instructions

    1. Preheat the oven to 350-degrees F.
    2. Line a pan with parchment paper.
    3. In a bowl, mix together the butter, flour, sugar, and salt until the dough comes together.
    4. Firmly pat the shortbread crust down into the bottom of the pan as evenly as possible.
    5. Bake the crust for 13 minutes and then remove it from the oven.
    6. Immediately sprinkle the chocolate chips, coconut, and caramel bits over the top of the crust.
    7. After that, pour the sweetened condensed milk over the top as evenly as possible.
    8. Bake for an additional 20 minutes or until the top begins to become golden brown.
    9. Cool, cut, and store any extras in the fridge!

    Tips

    • Lining your pan with parchment paper will help keep the bars from sticking and make it easy to remove them from the pan.
    • Do not use regular caramels as they will harden back up after a day and be difficult to eat.
    • To make the sweetened condensed milk easier to pour, first place it in a microwave-safe container and microwave for about 30 seconds.

    How long are Samoa Bars good for?

    These bars will keep for about 5 days if you store them in the refrigerator in an airtight container.
