    Whether you are looking for a sweet brunch addition or a dessert just for fun, this sweet and tart raspberry coffee cake is perfect for any occasion. Tender cake studded with tart raspberries and dark chocolate and topped with slivered almonds for crunch.

    I wanted to make something with fresh raspberries, hoping to entice my picky eater (Ethan), to try them again.  I can usually get him to eat something if I put it in cake/muffin form, and almost always when there's chocolate involved.

    A coffee cake is a fun way to eat sweet bread. We all love the crumby texture. Sometime soon I want to try to make some raspberry bars to put in their lunches too.

    This cake is so, so good.  It's sweet, and a little tart, the almonds give it a little crunch.  Fabulous. Well, my picky eater didn't think so, but the rest of the family loved it!

    If you're a raspberry and chocolate lover, you're going to want to make this for Sunday breakfast, your sister's cousin's bridal shower, and Easter brunch.  It's that good.

    What type of pans can I use to make this cake?

    The best pans for cooking coffee cake are round, nonstick bundt pans. These are the pans that have been used for years to make a classic coffee cake. But the shape of the pan honestly doesn't matter. You can use a nonstick square or rectangle pan as well. If you choose to bake it in a glassware, grease the pan really well and watch your cooking time.

    Is coffee cake good for breakfast?

    Coffee cake is a wonderful treat for breakfast! My raspberry coffee cake is especially perfect for breakfast because it has the nutrients of fresh raspberries. Serve this with eggs and bacon for a filling and nutritious start to your day.

    What kinds of chocolate chips can I use?

    I chose dark chocolate chips because I love their low sugar counts and the deep profile they added to the coffee cake. But you can use milk chocolate chips too. In fact, white chocolate chips - while they won't look as beautiful in the cake - will taste extra sweet with the berries.

    🔪Instructions

    • Preheat the oven to 350-degrees. Spray a round cake plate with non-stick cooking spray and set it aside.
    • To make the streusel, cut the butter into the sugar and flour using a dough blender or fork. Mix in the almonds and set aside.
    • In a large bowl, combine the flour, sugar, baking powder, and salt. Stir in the butter, milk, vanilla and egg. Scrape down the sides, and take care not to overmix.
    • Spread half the batter into the prepared pan. Spread the jam over the batter, sprinkle with half the chocolate chips, half the fresh raspberries, and about half the streusel topping. 
    • Spoon on the remaining batter, and top with the rest of the chocolate chips, followed by the remaining raspberries and streusel topping.
    • Bake for 40-45 minutes, until the top is golden brown and the cake is cooked through. Wait at least 15 minutes before cutting.

    📖 Variations

    This is such a versatile recipe. Just replace the raspberries with fresh blueberries. You can even use blueberry jam if you want. Blackberries would also work as they are super similar to raspberries.
