You will love when you have leftovers of this creamy chicken casserole!

    🍲 Storage

To Store: Leftover Potato Chicken Broccoli Casserole will keep for 4-5 days in an airtight container in the refrigerator. (These are my favorite airtight containers.)

To Reheat: Microwave individual portions in 30-second intervals until heated throughout.

✏️ Make Ahead & Time Saving Tips

Chicken and broccoli mashed potato casserole is an easy dinner with a few shortcuts that will save you time. One of my favorite things about casseroles is that they're just a bunch of components thrown together, and a lot of those individual elements like the chicken and mashed potatoes can be made ahead of time or batch cooked to make future meals easier.

Use leftover pulled chicken or shredded rotisserie chicken. I like throwing the chicken in the crockpot in the morning, then it's hot and ready when I want to use it. I usually make enough for two different recipes.

Check out our list of chicken casserole recipes for more ideas on other recipes that call for shredded chicken.

If you're making mashed potatoes, make twice as much as save some. It's a huge time saver to be able to just pull it out of the fridge! You can use leftover cheesy mashed potatoes or red skin potatoes in this casserole recipe and just add the additional seasonings to suit your tastes.

    📖 Recipe Variations

The first time you try any new recipe we recommend that you make it just as it is written on the recipe card since that is how the recipe has been tested. However, the next time you make our recipe, you might want to try one of these ideas:

It's easy to switch up the flavors of this simple dinner by using Italian seasoning, ranch seasoning, or even Mediterranean seasoning mix.

For a bit of heat, add a little bit of old bay seasoning or a pinch of red pepper flakes.

Substitute mashed cauliflower or mashed sweet potato for the red potatoes for something different.

    🍴 Serving Suggestions

This all-in-one meal really doesn't need any side dishes, but if you're serving a lot of people, you might like to add sweet potato rolls, side salad, or an easy veggie side dish.
