    One of my favorite recipes, this creamy cheesecake dessert is something that has been in my family for a really long time. I couldn't be more excited to share it today.

    This recipe definitely helps get into the fall spirit! It's perfect for your next family get together, or save it for Thanksgiving for a definite crowd pleaser!

    This is a great Fall dessert, or even afterschool snack. It would also be a delicious and quick make-ahead alternative to pumpkin pie on Thanksgiving! Whenever you serve it, it's sure to be a big hit with your family and friends!

    🧂Ingredients

    You only need a handful of simple ingredients to make this easy recipe:

    • cream cheese
    • store-bought or homemade pumpkin puree
    • pumpkin pie spice
    • vanilla instant pudding
    • sweetened condensed milk
    • cool whip topping
    • graham crackers

    🔪Instructions

    1. Add crushed graham crackers to each glass.
    2. In a large mixing bowl, beat together the cream cheese, pumpkin puree, pumpkin pie spice, vanilla pudding mix. (You can also use an electric mixer.)
    3. Add the sweetened condensed milk and continue mixing.
    4. Using a wire whisk, gently fold in the cool whip topping.
    5. Add the pumpkin cheesecake mixture on top of the graham cracker crumbs in each glass.
    6. Top each dessert with additional whipped topping and graham cracker crumbs.

    Tips

    Pop the graham crackers into your food processor and pulse to crush evenly into fine crumbs.

    Sprinkle a little brown sugar streusel over the top for a bit of texture.

    Variations

    • Instead of graham crackers, substitute gingersnap cookies or vanilla wafers.
    • Make your own homemade whipped cream using whipping cream and vanilla extract.
    • If you don't have pumpkin pie spice on hand, use the following: 
    • 1-½ teaspoon ground cinnamon
    • ½ teaspoon each nutmeg, ground ginger, allspice

    Here's how to make a no bake version of a whole cheesecake for your next Fall celebration:

    1. Lightly grease a springform pan.
    2. Combine the graham crackers with 2 tablespoons melted butter and press into the bottom of the pan.
    3. Top with the cheesecake filling and smooth the top with a rubber spatula.
    4. Cover with plastic wrap and keep refrigerated until ready to serve.

    Ingredients

    For the bottom of the cup

    • Graham Cracker Crumbs

    For the filling

    • 1 8oz package of cream cheese (room temperature)
    • 1 15oz can pumpkin puree
    • 3 teaspoon pumpkin pie spice
    • ⅓ cup vanilla instant pudding mix
    • 1 14 oz can sweetened condensed milk
    • 1 8oz container cool whip - you can put some aside for topping if you'd like

    • Line the bottom of your cup with the graham cracker crumbs.
      Graham Cracker Crumbs
    • Using a mixer with the paddle attachment or a large bowl and hand held mixer, beat the cream cheese, pumpkin puree, pumpkin pie spice, and vanilla pudding mix.
      1 8oz package of cream cheese (room temperature), 1 15oz can pumpkin puree, 3 teaspoon pumpkin pie spice, ⅓ cup vanilla instant pudding mix
    • Add the sweetened condensed milk and continue mixing.
      1 14 oz can sweetened condensed milk
    • Switch to a wire whisk and gently fold in the cool whip. Be sure to scrape down the sides of the bowl.
      1 8oz container cool whip - you can put some aside for topping if you'd like
    • Use a rubber spatula to transfer the pumpkin mixture to a pastry bag and fill each up almost to the top. (The pastry bag or piping bag is optional but will make a very clean and pretty presentation.)
    • Top with additional cool whip and graham cracker crumbs.
