In our house, we eat pork about once a week, which means we usually have leftovers. Whether it's oven roasted pork tenderloin or air fryer pork chops, I love using leftovers to make this easy casserole recipe.

You can use the frozen veggies right out of the freezer - no thawing required!
This recipe can also be used with leftover beef from a pot roast to make a beefy version.

Storage
To Store: Leftover Pork Casserole should be stored in the fridge in an airtight container. (These are my favorite airtight containers.) Stored properly, this will last 3-4 days.
To Reheat: Microwave individual portions in 30 second intervals until heated throughout.
Variations
The first time you try any new recipe we recommend that you make it just as it is written on the recipe card since that is how the delicious recipe has been tested. However, the next time you make our recipe, you might want to try one of these ideas:
- Add a little extra flavor by using a tablespoon of pork seasoning rub, Mediterranean seasoning, or Italian seasoning.
- If you have a few extra minutes, saute 1 small onion in a skillet with butter until tender and stir it into the casserole mixture before baking. This will add delicious flavor to the casserole.
- Instead of noodles, use 1 ½ cups of cooked rice or cooked potatoes.
- If you don't care for mushrooms, you can use cream of celery, or make your own cream soup substitute.

- 3 cups cooked pork tenderloin diced
- 2 10.5oz cans cream of mushroom soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1½ cup frozen peas and carrots
- ½ cup frozen corn
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- 12 ounces egg noodles cooked according to package directions
Instructions
- In a large bowl, make the sauce by combining the sour cream, cream soup, and seasonings.2 10.5oz cans cream of mushroom soup, 1 cup sour cream, ½ teaspoon garlic powder, ½ teaspoon salt, ½ teaspoon ground black pepper
- Fold in the vegetables, bite-sized pieces of cooked pork, and noodles.3 cups cooked pork tenderloin, 1½ cup frozen peas and carrots, 12 ounces egg noodles, ½ cup frozen corn
- Transfer the pork mixture to a greased casserole dish.
