Lavender is a great herb and is part of the mint family and has a slightly sweet floral flavor (say that 5 times fast!)  It is often used in salads and dressings, and of course is part of a blend of herbs called herbes de Provence, which is commonly used in French cooking.

Depending on your climate, you can grow lavender at home and use it for a variety of purposes - it's a great way to ease tension, headaches, and anxiety.

    What does lavender taste like?

Lavender is a member of the mint family and some people think it has a subtle hint of mint. It is definitely a unique and distinctive earthy flavor all its own, however. As the old saying goes, "a little goes a long way as lavender" has a very floral aroma and flavor.

"Herbaceous," "woody," "undertone of mint," "earthy," "smokey," "apple-like" and "green" are descriptive of the taste of lavender. A member of the mint plant family, lavender has a unique and distinctive flavor that separates it from other species of mint. Lavender presents a floral, pungent aroma and flavor.

    Is lavender edible and safe?

Culinary lavender is considered safe to ingest. For more information on safety, visit the U.S. National Institutes of Health (NIH).

But back to our lavender lemonade recipe... today we're using lavender buds to flavor our lemonade.  To do that, we're going to create a 'lavender essence' by boiling the lavender buds.

    Where can I buy lavender?

You can find lavender at many natural food stores or order it online. Be sure that you use culinary lavender.

This looks amazing, but I don't have any fresh lavender on my plant right now, I have a bunch of dried lavender, do you think that would work? I really want to try this but don't want to wait for new buds!
