If you love casseroles as much as we do, then you won’t want to miss this bubbly, cheesy, and spicy biscuit casserole that creates all the best Tex-Mex flavors in one casserole.
Made with layers of flaky biscuit crust and layers of cheese, beef, and veggies, it’s a great recipe for any potluck or family dinner. Plus, this easy recipe is easy to freeze and great for leftovers, too.
Ingredients
Here are the simple ingredients you need to make this easy casserole:
- Ground Beef - This recipe can be made with ground turkey, ground chicken, ground pork, or plant-based protein instead of beef if you prefer.
- Taco Seasoning - You can use either homemade or store-bought taco seasoning.
- Refrigerator Biscuits - Look for the large biscuits in the refrigerated section of your grocery store.
- Sour Cream - Low-fat or regular sour cream will both work in this recipe.
- Mayonnaise - This adds creaminess to the sauce.
- Cheddar Cheese - I like sharp cheddar cheese. For a spicier kick, substitute some or all of the cheddar for pepper jack cheese.
- Onion - Use yellow onions or sweet onions.
- Bell Pepper - You can use any color bell pepper.
- Diced Tomatoes and Green Chilies - I use the mild version of Rotel, but you can choose any variety you like.

Thank you for catching the typo! We have corrected it. You place the biscuits into the prepared 9x13 baking dish to make the biscuit crust.
