    • Our flourless peanut butter cookie recipe means these are gluten-free!
    • This easy recipe makes a ton of cookies, so you can freeze some for later.

    🧂 Ingredients

This is meant to be a brief overview of our easy peanut butter cookies recipe. For step-by-step instructions and a full printable recipe card with ingredients, please scroll down to the teal box below.

Here are the simple ingredients you need for these gluten-free cookies:

    • granulated sugar
    • eggs
    • peanut butter
    • vanilla extract

    🔪Instructions

    1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
    2. Combine granulated sugar, peanut butter, eggs, and vanilla extract with a hand or stand mixer. It will be crumbly like wet sand.
    3. Using a cookie scoop, scoop out dough and roll it into balls.
    4. Place the cookie ball on prepared baking sheet.
    5. Use a fork to gently press a criss-cross pattern in the dough on top of the cookies. Do this for all of the cookies.
    6. Bake cookies for about 10 to 12 minutes or until cookies have dried and are no longer as shiny.
    7. Let cookies rest on the cookie sheet for 5-10 minutes and then transfer to a wire rack to cool completely.

    • Dry measuring spoons
    • Liquid Measuring Cup
    • Large Mixing Bowl
    • baking sheet with parchment paper
    • Cookie Scoop and fork - I adore my cookie scoops. They're a great convenience but not required. The tines of a fork will be used to squish the dough balls.

    💭 Frequently Asked Questions

Here are some questions (and answers!) readers often ask about this 4-ingredient peanut butter cookies recipe.

Why do peanut butter cookies have fork marks?

Those fork marks aren't just for looks; they actually help the cookies bake more evenly. The dough is dense, so flattening them with the classic fork marks makes sure you get the perfect bake every time.

Should you refrigerate peanut butter cookie dough before baking?

Yes! Even an hour in the fridge will improve texture. You won't regret it.

How do you tell if peanut butter cookies are done?

You can tell the cookies are done when they are no longer shiny and look lightly brown on the top.

What can I substitute for eggs in peanut butter cookies?

You can substitute ¼ cup of applesauce per egg called for in cookie recipes.

How do you thicken flourless cookies?

If you find your cookies are too thin, you can substitute some of the butter for a solid shortening like Crisco.

    📖 Variations

    • Swap out the creamy peanut butter for crunchy peanut butter to add some crunch.
    • Sandwich a little bit of Chocolate Toffee Chip Frosting or chocolate ganache between two cookies.
    • For a fancier cookie, drizzle melted chocolate chips over the baked and cooled cookies.

How do you keep cookies fresh?

    • Completely cool cookies before storing them.
    • Place the cookies into an airtight container.
    • Use pieces of parchment paper between layers of cookies.
    • On the very top, add a piece of parchment paper and a slice of white bread to help keep the cookies fresh.
    • Store the cookies at room temperature.
